You mentioned they must close on brew days. I just visited yesterday, and they mentioned they only have 40 brew days a year and I happened to turn up on one of those days, sipping their amazing Lambic beer in the bar area whilst they were making the beer right in front of us, all the smells and the heat. Amazing experience.

So envious that you got to go to Cantillon, I really want to go sometime. Hopefully you brought some one offs home, or at least tried some. Their one offs also make for great trading material to get a hold of some of those really hard to get rarer American beers. Really cool video, looks like a good time! +The Master of Hoppets I picked up Iris, a Grand Cru and Cuvee St Gillions. But yes what a fantastic trip. Look out for Tomasz Kopyras video, he was wearing a Go Pro on his head! Made the video looked like a drone was flying around the brewery!!

They'll have a drink by date on the bottle. Most fruited lambics should be drunk within 10 years of the bottling date. Gueuze should be drunk within 20 years of the bottling date.
