My mother's barvanese friend prepared this few times in our home in Mogadishu, and its served with fish cooked with coconut juice so, is it the same with this fish? every food or cookies that i know in somalia is here, i cant tire watching this channel, thank you for the sharing all these nice recipes.

We used 2 types of semolina. Semolina #1 is a fine grind (almost like flour) whereas Semolina #2 is a coarser grind (more granular). In the United States, look for Cream of Wheat (Farina). In Indian stores look for Wheat Sooji (Suji).

You can use creamy wheatlets or cream of wheat. When using corn meal you will need to soak for a longer period and you will have to add flour to it.

That sounds like "Nkaaki." It is similar to sabaayad but it is deep fried, then syrup is poured on top of it. Is that what you mean?

is there another name for coarse semolina? I looked everywhere from american stores to indian stores and they dont have coarse semolina? could it be under a different name?

Traditionally, this bread used to be fermented for a long time. In our case, we wanted to speed up the process, which is why we used both the yeast and baking powder. Using yeast only in a larger quantity is not desirable as the bread will taste yeasty. Using baking powder only and in a larger quantity will result in an unpleasant taste. The combination of the two gives the bread enough pop without compromising the taste.

Apart from the fact that both use semolina as an ingredient, this is very different from basbousa. We make basbousa and its ingredient list is different. Thanks for commenting.

you know if you bake this dough in a baking dish then add syrub that you made in Fried Sweet Dumplings will turn into a middle eastern dessert called namora or basbosa. they add a little coconut to it!
