Brazilian Carrot Cupcakes with Brigadeiro

These carrot cupcakes are filled and topped with brigadeiro, this is how we do carrot cake in Brazil. It’s so delicious, fudgy, and rich!

Carrot Cupcakes
1 1/2 cups all-purpose flour (191 g)
1 tsp baking powder
1/4 tsp baking soda
1/4 tsp fine sea salt
1 2/3 cups chopped carrots (200 g)
1/2 cup vegetable oil (120 ml)
2 large eggs at room temperature
1/4 cup milk at room temperature (60 ml)
3/4 cup granulated sugar (150 grams)
1 tsp vanilla extract
Brigadeiro
2 2/3 cup condensed milk (794 grams)
2 tbsp unsalted butter (28 g)
1/2 cup semisweet chopped chocolate or chocolate chips (85 g)

Carrot cake is all time classic, that has been experimented on by many 😊😊 I love experimenting myself, and even made my carrot cake with mango 🥭🥭 I love your cupcakes! Combination of carrot cake and brigadier is so novel and I am super tempted to try!
