These carrot cupcakes are filled and topped with brigadeiro, this is how we do carrot cake in Brazil. It’s so delicious, fudgy, and rich!

Carrot Cupcakes
1 1/2 cups all-purpose flour (191 g)
1 tsp baking powder
1/4 tsp baking soda
1/4 tsp fine sea salt
1 2/3 cups chopped carrots (200 g)
1/2 cup vegetable oil (120 ml)
2 large eggs at room temperature
1/4 cup milk at room temperature (60 ml)
3/4 cup granulated sugar (150 grams)
1 tsp vanilla extract
Brigadeiro
2 2/3 cup condensed milk (794 grams)
2 tbsp unsalted butter (28 g)
1/2 cup semisweet chopped chocolate or chocolate chips (85 g)
