So glad to hear someone else has run into the same issue with proofing the enriched doughs from this book. Next time I will definitely try using warm milk and room temp eggs. Thanks for the suggestions!

Hi!! Thank you so much!! I never have used a stand mixer, simply because I haven’t been ready to invest in one! But I’ve heard great things, way easier to mix and knead your dough for sure! The only bad feedback I’ve heard, is they can sometimes over knead your dough. I hope this helps!!

I have a book suggestion for you, Whole Grain Sourdough at Home by Elaine Buddy. She has many videos but I would love to see your take on her recipes. She does cold start.

I think it would be great if you tested a bunch of different baking recipes for us! Share your experiences! And I hope you do try the "bread toast crumbs" peasant bread recipe, and compare it to your other breads that you've made. It's like 1% of the effort of most bread and quite surprising in how good it tastes. I'd be interested to hear what you think too!
