IMHO.. kinda sucks to do a bread recipe video and to tell people... " buy my book if you want the whole recipe". Obviously you have your recipes in your book, but it's uncool not too include the one in your video.

Made this twice now and very happy with results. However when I add the oats my dough gets to be a soggy mess until i add more flour. I'm thinking of just adding another 50gm of flour with the first mixing!! Also the second time a got multiple bubbles on the skin of the loaf when it was baked. I do wonder if the oats SHOULD be cooked or not, that extra water in the oats really make a difference. But thank you for the digital hand holding!

Hi! Just came across your video 3 years later! Question… if you feed your sourdough once a week, can you discard half, feed it and put it in fridge and a few days layer when your ready take out, let come to temp on the counter not doing anything to it and let it rise fully then bake with that rise rather than dump half again and wait to rise again? Does that make sense?

Thank you for the inspiration. Took a month to make starter and enjoyed discard pancakes while letting it mature. Got the book and just now made the beginner sourdough bread. OMG!!! Love the crust. Love the chew. Ate half the loaf. Appreciate the clarity of your video combined with the books details. I notice you no longer post videos. I do hope that you are doing well. Thanks again.

Hi there! Yes I would definitely recommend waiting to put in into the fridge until it is fully active and you have tested it & had a successful loaf. Hope this helps!

Equal portions of starter, flour, and water. Use a scale. Use some whole grain wheat and maybe some rye. Use un chlorinated water.

I'm glad I found your video, I was doing so well through this book and could not for the life of me get the brioche to work. I've never made brioche before, and this book is advertised for beginners. It seems this recipe will never work exactly as written, and you have to do extra research to figure out what to do differently to get the recipe to work, which defeats the purpose of the recipe book. It needs correcting and additional explanation. Thank you for the validation! I will try brioche again, maybe not this book's recipe, though.

If the dough is too sticky (because of the high hydration) , I always use a slap and fold technique and I never add an extra flour, because it is change the hydration level of the dough. I learned this technique from a Richard Bertinet video.
