Things we put under the microscope camera this time: a kernel of wheat, a kernel of corn, whole wheat flour, whole wheat bread, white bread (Wonder Bread), real bakery bread with cornmeal dusting, mashed potatoes, regular pasta (linguine), bronze pasta, letter pasta, Thai rice noodles, brown rice, white rice, Rice Krispies, Corn Flakes, Fruit Loops, Frosted Mini-Wheats, Cinnamon Toast Crunch, Chex Mix (including pretzels), Lay's Classic potato chips, Pringles, Doritos, Cheetos.

11:40 it's called a Hyperbolic paraboloid. fun fact: they don't shape them into hyperbolic paraboloids. The chips naturally adopt that shape while frying because it's the shape that minimizes stress distribution.

funny fun fact, since Claire had so much trouble reproducing that shape in her Gourmet Makes video also, that shape is more generally referred to as a saddle shape!

Hmmmmm not sure about that one. Pretty sure the cup shape (elliptic parabloid) minimizes stress distribution. Just like pepperoni when cooked. Even makes sense intuitively: you gotta stretch out the sheet to get it to a saddle, whereas you compress it to get it into a cup shape. Hyperbolic vs Spherical geometry baby.

In the US, or at least in New England, brown bread refers to a steamed bread baked with molasses. You can still buy them packed in tin cans at any grocery store.

Here in Canada, we called it Brown Bread when I was young. (I'm 63) But I don't recall special designations for all the variations like whole wheat, whole grain and etc.

Pringles are hyperbolic paraboloids that took 2 years to design! Their intersecting double curvature doesn't promote crack propagation, hence the extra crunch of pringles. They were also an optimal shape for stacking and strength within their tube, no need to inflate a bag 70% with air to keep the poatatos safe.

This was way more interesting than I expected. The brands make everything seem so different from each other but in the end they all come from basic seeds. Texture I think plays a large role in how different the end result is from one another. Pretty cool. Thanks Adam.

Regarding the rice crispies: There are versions of this made directly from rice grains in Asian countries. One of them is "Puffed Rice", and the other would be "Flattened Rice". The second one is roughly an analog of corn flakes, which when fried, looks like the crispies you showed in this video. Then there is "Popped Rice", like pop corns!

my mom was my Biology teacher in Senior year of school. this episode reminded me of her teaching a botany class. and essentially it is a biology class which started from grains and ended with food and junk food made from these seeds and grains.

We also call darker bread from a mix of materials "wheat" bread, and normal bread was pale yellow or gray without any hard chemical stuff but called "white". The official label was "bran bread", along with "alive" (tastes like mold) or "seed". Brans would also be found on the underside of regular bread, and that what I find modern wholegrain pasta tastes like. That was 30 years ago before modern health concerns. I'm enjoying six eggs and coffee with a stick of butter. Cut the carbs and swim in cholesterol.

In France we call wheat bread whole bread, and the white one just bread (usually referred to as baguettes, because that's what we eat). And for us "wonder bread" is "Pain de mie" translates into bread of the ... (Insert the opposite of crust, aka the white fluffy stuff)

It's crazy how the structure of monosodium glutamate is so uniform in its crystallization compared to normal sodium chloride. I feel like table salt is so abstract in its crystals and the msg is so... just perfect lol.
