Else people would never understand economic or the foundational heritage of bread. Not just cheap by some pennys (so cheap, that making your own bread is more expensive in industrialized countries, then buying the bread), but important as we see during the Ukraine-Russian war. (Stopped season transports) It is so important as an introduction and logical friendly path for food economy. Worship bread from your local store and worship this technology!

Long time fan from Ukraine here. As for Chernobyl. What reportedly happened is russians came to Chernobyl on their military vehicles, stirred radioactive dust up. They also dug trenches. The radiation level rose than fell back to normal. When they fled from Kyiv and north of Ukraine, thy left Chernobyl. Reportedly, the soldiers, who were stained there, got radiation sickness, because of the dust and the fact that they looted the facilities. Also, some reports say that the reason why they ignored all the radiation warning signs is that they used 1985 maps that don’t mark that area as dangerous. As for the situation in Ukraine in general, the russian offensive basically stopped, Ukrainian counter-offensive is reportedly on the way in the south, albeit slow. This month, there were also some strikes on russian military bases in Crimea. There are serious concerns about russians’ using Zaporizhia NPP as a military base. They are basically holding the Ukrainian staff hostages. The NPP and the area around it is often shelled. Our sides says, it’s russians who shell it to blackmail Ukraine into surrendering. An IAEA team has gone to the NPP for an inspection.

As a German I am quite into bread. Also happy that Seamus recognizes that real bread (with a healthy percentage of whole wheat) is nutritius and healthy. I am allways offended when some influencers or celebrities or whatnot act as if eating the one food that helped humanity grow for thousands of years is almost dangerous. Crazy IMO.

I came back to my dusty bedroom from cleaning the air filters in the other room, this podcast was playing on autoplay (was listening to something else before) and Jim was talking about a dusty room. Pretty surreal.

There's a video online by a food guy named Adam Rugea who was saying unwashed eggs do not need to be refrigerated. They do not wash eggs in Europe and some Asian countries. In North America we wash our eggs and because of that we are supposed to refrigerate them or they will go bad faster. Not sure who is right but would investigate further if you live in North America and are deciding whether or not to put your eggs in the fridge.

I remember watching sliced bread commercials touting the easy insertion into the new automatic electrical bread toasters. I talked my mother into buying some of the new fangled store bought bread. I was such a fool! I miss her bread terribly. The smell of it coming out of the oven just as I walked in the door from school was, I'm sure orgasmic, but I was just too young.

Hey i love cold bread on a cold sandwich. Make ya sammich. Wrap in butcher/parchment paper and put it in the fridge for a couple hours or over night. The whole thing tastes better because the flavors and textures have time to infuse.

Even having Subway in America compared to australia was night and day. It was almost inedible. You can tell it’s loaded with sugar too by the way the toaster burnt the bread in about 15 seconds

About the eggs in the fridge: I heard that in America eggs are washed before they get into the supermarket. This removes a natural protective layer against all kinds of germs, and that's why they have to be refrigerated. In Europe they are not cleaned, so there is no need for refrigeration. One advantage of the US eggs is that you have a lower chance of contracting salmonella when you touch egg shells.

I worked at Tip Top and yes those sliders are scary machines. If a blade broke, we would stop the machine, and have to remove the broken blade, and then shift over the others to keep the correct slice spacing. We had to wear special gloves, like the ones commercial fishermen use to avoid slicing fingers off. Jim, you would be familiar with Vietnamese bakeries in Oz, do the Vietnamese have bakeries in the US?

300g strong bread flour. 5g instant yeast. Splash of olive oil. 3g salt (keep separate from yeast). 4g sugar. A few dashes of white pepper. 190ml warm water. Mix together then kneed for 15/20mins (use olive oil on hands). Let it rise in a bowl for 18 mins. Separate into 4 balls with a coating of olive oil. Place on a baking tray & let it rise for 40 mins then place in the oven at 230c for 13/15 mins. Let them cool. Enjoy.

Fun fact about the beers part, beer was invented before the wheel. There's Babylonian tablets describing beer being taking to temples by people, then centuries later its then taken by cart. It's not 100% but suggests beer was around before wheels.

Washed eggs musty be refrigerated to prevent decomposition. UNWASHED eggs can be left out for weeks.

The whole war effort /slices bread ban thing is because wax paper uses paraffin wax and paraffin wax is a fuel type as well as a water proofing agent.

42:58 We have to refrigerate our eggs in the States because we wash off the protective film because we are scared of a little chicken poo. They don't wash the eggs in Europe or other places. I've had drinks made with raw eggs that had been sitting the tropical sun. I was fine. Don't wash your eggs until you eat them if you have chickens.

As an Aussie who has visited the US I fully concur. American Bread, coffee, chocolate and cheese are abominations. Oh and eggs! Do you understand egg yolks are meant to be a golden orange, not sickly pale yellow?

If bread has to have a raising agent then explain to me flatbreads such as roti which uses steam and matzo which is just hard like a cracker im sure there are others too

Roti and most flat breads are made on the stovetop, fried or steamed. Not baked. A traditional bread, in most cultures are baked in an oven, stonebake fire oven, in Indian culture you would use a tandoor oven. Naan bread is a popular choice. (Mexican) tacos is also considered cracker/ wrap, not a bread. But the main reason is that bread is considered bread, is because it's baked , not fried.

@@facelessqueenie8873 but my argument remains that soft shell rotis, tacos, burito flatbreads ARE infact all considered breads, and while I don't know all breads ive certainly seen many non standard breads, made out of a variety of flours from potato flour, to rice flour etc... An argument can be made that dumplings are a form of bread and dumpling might be made from a dough that doesn't use any flour at all, and donuts are definitely breads though admittedly they have both a flour and a raising agent the more I think of it as I write this the more I'm ready to die on this hill that flatbreads ARE infact breads therefore bread does NOT require a leavening agent it does however need either a flour or a dough with some type of startch Thanks for coming to my Ted Talk rant about breads lol 😆

50:20 Re- the movie villains statement - "...(Australians), we"re not allowed out accents in anything". Well. How about Director Krennic in *Rogue One: A Star Wars Story* ? It's true though... I'm based in Perth Australia, and I watched the premier with fellow Australians and we all laughed whenever the 'villain' Krennic spoke. If he'd put on a British accent it would've been more palatable.

Eggs in America must be refrigerated. They are treated with a coating that kills harmful agents. That is the reason for the fridge in America for commercially produced eggs.

Came here to just to say that it is pretty unfair to say that "[Poland] was f..ing racists" at least in the context of the bread making by Jews. First of all, there was no polish goverment in 18th century, as Poland was occupied by Russia, Prussia and Austria. Secondly, the fact that Jews were not allowed to make a bread or not allowed to do from specific flour was not polish invention. Generally Jews had hard life in whole Europe since ever. Do not get me wrong, there are poles who are antisemitic (or racist), but contributing antisemitism only to Poland is just not correct.

I was about to say same thing. There is a reason there was so many Jews in Polska pre and post partitions, a fascist country wouldn’t have the largest Jewish population outside of NY. Also wasn’t the bagel linked to Jan III Sobieski.
