Want to know why a poutine is called poutine? I'm from a small town in Quebec, where Poutine was created. Story has it that years ago, there was a man who made the strange request of covering his fries with cheese and gravey at a local mom and pop fast food joint. The owner of the restaurant said to the customer (in french) "That's going to make a pudding!" - As there is no word for pudding in french, the man said the word in broken english which made it sound like the word, "poutine". And hence, our broken english created the name that is - Poutine.

Why didn't you bake the fries 2 times? Normally when you make authentical Belgian fries you bake them twice. First at a low temperature (160-170°C) to get them hot inside. Then you dry them on some paper towels. Then you bake them a second time (very short) at a high temperature (190°) to get them really crispy. Just a tip from a Belgium fries lover :)

As a true quebecer, I have to comment the cheese curd (squeaky cheese). It’s actually a fresh cheddar made from curdled pasteurized cow milk, with rennet. It’s not pressed nor aged. To have the « squeaky » texture, it’s kept at room temperature, so you eat it the same day it’s made, still warm . As soon as it’s refrigerated, it gets dry and looses the texture. My suggestion is : if you can find cheddar cheese curd, try to get it fresh from the day.

Looks good. But one note on clarifying butter -- those aren't "impurities" sinking to the bottom -- they're milk solids and, generally, salt, if you're using salted butter. Nothing impure at all. Just the more perishable bits of butter. The parts that make it taste like butter. We don't want people thinking there are impurities in their butter.
