same here. i was binging his stuff for a few months. never had fish before and ended up buying one and gutting it. felt like second nature after watching all of his videos lol i did karaage, which was delicious !!! did it again the next day !!! lol

I've heard that keeping the scales on keeps moisture between the skin and scales trapped and increases risk of bacterial growth. So sukibiki or descaling before dry aging should be beneficial for the fish. Love the content! Greetings from Belgium!

Trick for that soup: When your fish stock is as thick as that, what you want is something to cut the intense flavour. I would suggest some sort of pickled greens, like in Chinese recipe suan cai yu where they use pickled mustard greens of some sort and sliced fish fillet in a thick fish stock to create this spicy sour-savoury fish soup.

Grouper are actually incredibly intelligent fish they look dumb but they often see human divers and will hunt alongside them the same as they do with other fish.

Just a suggestion, if you make fish stock just boil for 45 minutes. Its enough time to make a good stock from a fish. Also better you add the fish after the stock is boiled and just cook lightly so the meat will not get dry
I don't know how your videos got into my algorithm but ever since watching the first video I came across last night, I somehow instantly got hooked...
