It's just a simple little piece of dialogue which you think leads to a huge theory but it doesn't! This could just be any random variant of Reed he saved just because he has nothing else to do. He was inspired by Strange's sacrifice that he also began altering dying hopeless realities so that more branches can continue to grow out of them. It's not as if this Reed is extremely consequential and must have been one of the Live Action variants that we've met before!

What If Is a glimpse into separate universe to what we know, it may be what if for the title, but as the Watcher says he's giving us glimpses into other universe that had alternate consequences from alternate choices and events, if they revealed enough info I am sure each would get a earth designation on wiki. when the fantastic four first went up against galactus and the silver surfer it was the watcher that that helped out getting reed the ultimate nullifier that scared galactus away... he may be referring to that. Also kahhori isnt what gets them from universe to universe, the ship is the what gets them from universe to universe... in howards cameo in episode 7 he says to birdie (their daughter) "your mom didnt create interdimensional travel for you to never call".
