1:47 I just realized the reason why they pass it through the curtain instead of just giving it to the shipment guy is so that he doesnt know which barrel has the blue in it, and is thus one less loose end in case the cops ever stop him.

The curtain is there for food safety, or at least, the appearance of such. The sauce is actually real, they might even still use the sauce after moving the product, so they have to generally keep it as clean as possible. It reaches its location and is then removed, and then truck goes on to actually deliver the sauce. The reason being is they can't exactly create twice the amount of sauce production without raising suspicion if someone were to ever look closer, and that would also be an extra expense. The trucks have to appear normal, so they have to actually distribute the sauce in case anyone is investigating them.

This scene represented how good everything could've been. All Walt (and Jesse) had to do was cook and not get in over their heads and they could've made as much as they ever wanted, just like Mike said. I really hope this is a joke comment and not just an oblivious assumption. Gus was trying to replace Walter with Gale because he knew Gale would be obedient but Walt was power hungry. He would have killed Walter once Gale learnt his recipe, which is why Walt ordered Jesse to kill Gale first. Even if Gus was willing to keep Walter around, it would have still been perilous for Walt’s family, as seen when Gus literally states that he is willing to kill his infant daughter. So no, Mike was wrong, it wouldn’t have ended up good even if Walt kept his head down, either Walt or his family would be dead. Edit: Even if Walt didn’t run over the 2 drug dealers, and Gus didn’t think of him as a threat, that would still result in Jesse’s death, since it was a two-against-one gunfight. So there was still never an option for Walt and Jesse to “keep their heads down” and continue working for Gus. Either one of them would end up dead.

I’ve always been impressed with Gus’ ability to have this many people on his payroll all of whom know his secret identity and keeping it a secret for this long. I mean, even the low level mooks that drive his trucks and pack his product know the truth.

Canonically, Los Pollos Hermanos is really well run and sells genuinely good chicken. If Gus had just focused on his legitimate business rather than on the drugs, he could have had the next KFC on his hands and made billions.

He hates his job. He doesn't even bother to properly close the containers. Its that point in the show where he is genuinely dissatisfied with all the wealth he has made for himself. Which kicks him into another gear. He wants more. There isn't enough money in the world to satisfy him because ultimately it is his ego that he wants to feed.

I remember there was a pollería (chicken shop) in my neighborhood, and around 2012 they changed their name and image to that of "Los Pollos Hermanos" it was shut down in 2 weeks.

Another reason to appreciate BCS is showing how Gus got to the point he officially had his drug empire. In BB, it was said Gus had been doing it for 20 years and building his own distribution over that time but most of the time he was under the Cartel’s thumb with his influence growing with the Salamanca operation declining, the Cartel relying more on Gus, Gus constructing the Superlab, Gus running the North Valley under Bolsa’s supervision. With production on his territory and causing pressure on the Cartel by having the Cousins and Bolsa killed, Gus officially had his drug empire. That’s why the Cartel attacked his trucks in Season 4 and wanted Gus to work for them again which resulted in Gus destroying the Cartel. Final step was Lydia’s idea with the Czech Republic but Gus died before it could be finalised. Walt went on to use Lydia’s idea for his own drug empire, which is why Walt’s operation is considered bigger than Gus’ operation.

I think it’s some kinda flint corn. It loses its color when fried, but it helps to give the seasoning a nice sweet undertone that compliments the chicken.
