I am Dutch and our main dish here is kale stew. We cook kale with potatoes together and a bit of salt. After 25 minutes you poor the water out and stamp the kale and potatoes together with butter and you have a wonderfull tasty ‘ stamppot’ as we call it. We eat it with fried bacon and a smoked sausage. Delicious in the winter.

A long time ago when I was just a boy, I'd often ride my bike, sometimes with a couple of friends, to my grandmother's house. She would inevitably have us doing some garden chores for her under supervision, of course. We'd mow, weed, prune, turn the compost, carry things here and there, whatever Gran would request. We'd be rewarded with (my favourite) a corned beef and salad sandwich, a glass of milk and her legendary Anzac biscuits for lunch. The sandwiches were almost always 'spiced' up with nasturtium leaves. I loved my gran, not just for her warm smiles, hugs, corned beef and sandwiches, Anzac biscuits, but also for instilling a love of gardening.

I would follow any advice this gardener shared with me. She seems to be that amazing neighbor who quietly and confidently shares garden wisdom, a recipe or two and extra plant cuttings to friendly neighbors. Dear Liz, I like kale this way: free the kale leaves from their stems. Put the leaves in boiling water for a minute. Drain and chop the kale. Fry a decent amount of diceg onions in some olive oil, add the kale and stew for 10-15 minutes. Not too soft! Add a spoonful of starch in water and boil again. Now add some salt, kale needs salt. I like my kale with a speciality called "Kasseler", which is lean pickeled and smoked pork. In Germany, we do also have all kind of sausage with the kale, and of course potatoes. It would be great to cook it for you! What a beautiful garden you have. I decided I must have more flowers next year. Sending lots of love, Y
