Enjoyed tour of local farm business, Falling Branch Brewery. Look forward to videos of more local businesses, including organic food producers and nurseries... . In the US we need to help grow family businesses and replace corporate farmers who have destroyed a diverse and safe food growing business. This area of MD is beautiful and should demonstrate the best of America. I am a native Virginian and take pride in the new food/ farm/ horticulture movement along with our wonderful history. In California there's a gentleman by the name of Huell Howser who filmed interviews of folks all around the state (California's Gold, Visiting... were two of his shows). The small stops, the interesting folks. His style of interviewing reminds me of yours. Very easy going, friendly, and curious about the world.

I get so aggravated because there are so many craft beers now & I can't have any due to a liver illness. It's not caused by alcoholism, but due to an inherited form of hepatitis, that was diagnosed in November of 2011. All I can say is, drink in moderation. That farm looks like it would be fun to visit. Ragweed.....lol I was watching Alan out of the corner of my eye for a while trying to keep his composure & I was trying to keep mine as well holding my laughter back and I couldn't hold it any longer. lol Yeah, I can be simple at times! Alan is a very funny person too, so I knew he'd see the humor in it all. You can't take yourself to seriously when filming. You know stuff is gonna happen now and than! lol Alex started all that out of college, so I guess self teaching. Mike...He's only 27 and has been at Falling Branch six years, so it's probably his first job out of college. I'll have to ask him when I see him this Sat. Wade (the bee video), Mike and his girlfriend, Holly and I are going on a canoe, kayak trip down the river and filming it. You guys had poor barley harvest, too? I don't drink and admittedly have very low tolerance for piss drunk people BUT this is the type of drinking I can get behind. I mean it's no different from a service farms where you can get a dinner (with beer) or participate in some event or festival (with beer). I mean I assume the idea is to enjoy a quality craft beer or two and not get wasted. The "alehouse" section is beautiful, too. Do they serve just beer or also stuff on side? The brewing process seems very interesting. Speaking of which do you prepare some of the questions beforehand because everyone who you talk with seem quite impressed with your questions? I noticed it in the mill video, too. Anyhow as far as content goes. What are your thoughts about live streams?

Hey Northie! The barley harvest....... I really don't know if that was an issue around here. They serve beer and there is also always a food trailer and sometimes 2 like yesterday. If it's a subject matter that I'm not familiar with, I will make myself familiar with the subject matter, but that's about it. The grist mill, I didn't do any prep. for that, and the brewery since I'm a fan of beer, that I didn't need to do any prep. I was blessed with a incredible memory, so that helps a lot with interviewing people as well. Now, next Sunday I'm doing a very unusual "field trip" which most people never get to see, so I will spend an hour reading on the subject the day before filming. I think you guys are going to love that video because it's really going to be something no one ever sees. I'm really excited about filming! Let me ask you, how do you like these "field trips" to different places. I'm trying to film interesting and varying subject matter so it stays interesting and diverse. @@marksgardenlife5971 Oh okay. I thought Alex maybe referred to that when he said there are difficulties to source barley locally. Barley is the most common crop here followed by oat and their production really took a hit this year as far as I know. I personally love field trip videos. I like seeing different places from all around the world, the nature specifically, but I don't mind learning about local culture and local sights like these either - and since I basically don't travel this is the best way to "see the world". They make me want to travel though. Live streams are by the way one nice way to potentially get donations. There's this superchat feature that allows folks to send money while you are streaming. Sadly youtube takes a big cut out of it so paypal is probably the way to go. Most youtubers (afaik) put that money into production of new videos so that's something to consider. Edit: I feel it also gives you... I dunno... more personal connection to the youtuber than the comments alone. I mean if you are planning to build a dedicated fan base. I consider it always a perk when a youtuber wants to interact with their fans live. You know, like you would treat casual friends. Of course not everyone wants that.

GREAT VIDEO and NICELY PRODUCED!!! Man, I can help the farmer out, and teach the boys how to produce ale and lager, but it will take some time, due to the learning curve, and it will cost a few shekels to upgrade the brewery. From watching the video, and listening to Mike explain the brewing process, which he did an awesome job at, American, homemade style, distillers' beer is produced during the brew day, not ale. An, entirely, different brewing method is used for producing ale and lager. The single temperature infusion method was never used for producing ale and lager because it cannot produce the beer. Since, the brewing method is used in grain distillation, chances are, the base malt is high modified, to over modified, high protein, malt, which is the type of malt used in grain distillation. Somewhere, along the line, the owner of the brewery, and Mike, learned the brewing method that was used during Prohibition for producing moonshiners beer, and not how to produce ale. When a person doesn't know the difference between a hay wagon, and a BMW, the person can easily be convinced by a slick salesman, that may sell tools, and books on building BMWs from wood, and iron wheels, that a hay wagon is a BMW, something similar may have happened. In 1960, the Hochkurz brewing method replaced the triple decoction method in the ale and lager brewing industry, immediately, increasing profit margin. In 2021, 60 years later, it appears that Alex and Mike are still using the same brewing method that was used one hundred years ago, during Prohibition. Those days are over, and it is time to move forward. There isn't too much, craft, science, or art involved with soaking malt in hot water for an hour. Also, in brewing ale and lager, recipes are a given. Creating ale and lager recipes is nonsense, especially, when the brewing method cannot produce the beer. If the chock board says ale, it should be ale coming from the taps. The farm beer is made from single temperature infusion, which is used in grain distillation for producing extract that contains mainly, simple sugar, glucose, which makes yeast, extremely, happy. The only thing that a brewer can control is the amount of glucose, and sweet tasting, nonfermenting types of sugar, that Alpha releases from amylose, during liquefaction. The problem with the brewing method is that, chemically, and enzymatically, it cannot produce ale and lager, due to the way enzymes work, and chemical precipitation, making, strike, target temperature, and the equipment designed around single temperature infusion, pretty much useless. The brewing method skips three steps that are used for producing ale and lager, conversion, dextrinization, and gelatinization because the steps aren't needed for making whiskey. To produce high octane moonshiners beer, use Crisp Marris malt, the malt is high in sugar content, and it is less expensive, than under modified, low protein, malt, and soak the malt at 65, 66, for one hour. Don't blast away enzymes by dumping the malt into high temperature, strike water, enzymes don't work backwards. Alpha releases the highest amount of glucose from simple starch, within one hour, at the temperature. The more glucose, the more alcohol. The high temperature, rapidly, denatures Beta. Beta is responsible for conversion, which occurs around 60 to 63. During conversion, Beta turns simple sugar, glucose, released by Alpha, into fermentable, complex types of sugar, maltose, and maltotriose. Maltose, and maltotriose are the sugars that produce ale and lager, glucose provides the alcohol. When conversion occurs, secondary fermentation takes place, due to maltose. Maltotriose is responsible for natural carbonation. Priming sugar, and CO2 injection aren't required for carbonating ale and lager. Artificial carbonation produces quickly dissipating, soda pop fizz, and the bubble isn't tight enough to support the head. When Alex has Mike throw away the spent mash, the richest, starch in malt goes with it, paid for, and to take the place of the starch, Alex purchases certain specialty malt. Alex, before purchasing specialty malt, especially, crystal, and cara, you need to know who made the malt, and what the quality of the malt was, before it became specialty malt. Some of that stuff is borderline, rancid, and contains fatty acid, look at the pH of the stuff before buying it, pH is near the pH of sour malt, but the malt is not lacto soured like sour malt is. If you are hooked on specialty malt, make your own from high quality, malt. If 40 to 50 percent of the grain bill is base malt, and the rest, specialty malt, you should cut way back on specialty malt. The rich, starch that Mike throws away, but at least is fed to the animals, instead of feeding it to worms, is heat resistant, complex starch, called amylopectin. The tips of malt contain the starch. The rich, starch is thrown out because the rest temperatures used in the infusion method aren't high enough to burst the heat resistant, starch, where it enters into the mash liquid, before Alpha denatures. The starch is sold in grain distillation. Amylopectin, contains the ingredients that provides body, and mouthfeel in ale and lager, which are limit dextrin, and pectin. In homemade style, moonshiners beer, starch carry over, Beta Glucan, and protein sludge provides body, and mouthfeel. To take advantage of amylopectin, the decoction brewing method is used, which also produces sugar, and chemically balanced, stabile, extract, and utilizes everything in starch. When mash boils, amylopectin, rapidly, enters into the mash liquid. The boiling mash is added back into the main mash, which is resting at a low temperature to preserve enzymes, mash temperature increases, and Alpha, liquefies, the amylopectin causing dextrinization, and gelatinization to occur. The finest ales and lagers are produced from dextrinous extract, not from extract containing mainly, glucose, sweet tasting, nonfermenting types of sugar, and carry over gunk.

But you & those DANG FLIP-FLOPS! *Smiling But Concerned* In the agribusiness field, farming, gardening, or as an owner of a large property which contains both pastoral and wooded areas, you need to begin to take more protective footwear into consideration. We don't want to see you suffer damaging injuries to your feet, like cuts, bruises, deep puncture wounds, whole toenails being pulled off, or even worse, losing of toes! Not meaning to come of in a paternalistic way, but it's just good sound common sense.
