Waaaaay overcooked. Why not "smoke" until close to 125 then Sear to give a crust? Guess he is not a fan of the reverse sear, which is ironic since this is attached to pellet grill.

How often do you clean grillbox? I don’t see a drip pan etc. I’m afraid unless you clean every 3 cooks or so flare ups will be issue?

The sear box is way better if you are a steak guy. Took him 16 minutes for a medium steak, and with the sear box, you're there in about 5 minutes.

🤔It's not, that's the beauty of it. Smoker with a BBQ grill attached, takes up less space then having one of each.

Thank you for watching my videos 😎. Yes it does. There is a ridge vent , 2-3" gap along the bottom of three of the four walls and several other gaps here and there. It does get smokey at times when using the smoker. Thanks for watching and asking 😎🍻

It's two cabinets screwed together. I ordered what I needed to get the length I wanted. They are solid maple cabinets cheap, take paint well and not all press board. I strengthen the base and added four swivel wheels behind the the toe kick area so you don't see them. The tops are just oak 3/4" plywood with solid oak along the edges. Hey Brian Where does the fat go / drain with the sear box? I know the other griddle pan attachment has the small grease tray at the front . But not sure where it goes to with the box Cheers ! Steve

Just to bottom grease pan, but it cooks pretty hot most burns up giving you that grilled flavor. 🍻

@@broccolihart1A heat diffuser plates turn flame into infrared heat vaporizes grease drippings. Is the thought, but if what you are cooking is really greasy you will get flare ups just like any other grill. I love the cooking space! I ended up here because I'm looking at getting my hands on some Camp Chef stuff. However, I noticed your enclosure and that also grabbed my attention. This spring I will be doing a similar project. My question is in regards to the type of wood you used to frame your walls and roof with. I really enjoy your channel and the product you produce. I have the CC x60 and was thinking of the grill box to save space but most review's note that it flare's up like crazy. Your cook seemed very smooth and drama free. Can you share any tips?

I haven't had a grill yet that didn't flare up with lots a grease/fat dripping down. These were new york strip steaks leaner then ribeye and I placed the steaks to the edges of the grill allowing grease to run to the center then burn off adding that grilled flavor. Also keeping an eye on them as they cook and move if necessary away from flare up area which will eventually burn out. Thanks for asking and watching

Put a little flour down the center of the V... the grease will collect in it and dry out itself. Easier to clean.

While you rest those steaks... everything gets cold... :-( Next time - foil those steaks and pop those shrimp right to the service plates... perhaps make a pan sauce to heat up the steaks.... unless you like warm/cool steak that is!
