I just made some last night. I sliced my ribeye into 1/4" "steaks" and did half by cutting it into smaller strips like you, the other half I pounded into thinner wider steaks. The wider ones I cooked whole and then sliced into strips. I noticed it was easier to evenly cook the pounded steaks but there was more caramelization on the pre cut pieces. Good job!

I hate cooking in the kitchen. ...but I enjoy BBQ. I got a three burner camp chef with a 2/3 removable flat griddle and I can't wait to start using it more. Wish I had more people to feed than just myself though. Lot of effort for yourself.

How often do you change the oil in the fryer? Also, with the shack and griddle, how far from the wall do you keep it? Do you put some sort of metal flashing on the wall to dissipate heat and flames?

Depends on the type of food and breading fresh or frozen cooked. You can strain oil to make it last longer. Not sure what the official specs are for distance clearances, but it does throw off some heat around it. I do have that metal siding. Great for heat and wiping clean. 🍻

@@kenstar1981 everyone always says that haha, "you took away all the flavor" the fat on the outside of the steak is not the good fat, it does not render down properly and is usually what ends up being chewy. The fat inside the steak is the high quality fat that adds the buttery flavor. He didnt want to risk having anything chewy in his cheesesteak, seeing how he got rid of a lot of silver skin when he trimmed it. There was enough marbling in these steaks for plenty of flavor without chancing any chewy fat.

Out of curiosity, I'm sure you have decent ventilation but how decent is it being an enclosed area with propane burners going? Are you using a carbon monoxide monitor to insure you're safe? Reason I ask is I've seen you burning heaters and the grill at the same time and for science. :) PS: Are these type videos kind of like ASMR or something? There is enough ventilation, a ridge vent and gap a long the bottom. The heaters I use are a blue flame vent less, designed to use in an enclosed area without a chimney. No I don't have a carbon monoxide but considering getting one. Autonomous sensory meridian response (ASMR) is an experience characterized by a static-like or tingling sensation on the skin that typically begins on the scalp and moves down the back of the neck and upper spine. It has been compared with auditory-tactile synesthesia and may overlap with frisson. Thanks for watching and asking.

I am not the only one who pointed this out. There is a correct way to cut steak, and an incorrect way. You used shaved ribeye for those sandwiches. I do not want money on a black stone grill. I have a wonderful cast iron that works wonders. I have never seen someone carve meat like that. It is not normal and the pieces were good pieces. I’ll give you instructions-on how to do it, and you’d like. By the way, if butter does not have a little oil mixed with it. It will burn, so burn is usually the last thing to go on.

Looks good and awesome setup. If I could critic one thing, that awesome prime beef for a over cooked philly seems overkill. I would use choice cut and have it sliced thin by the butcher. Everything has its place and prime beef is not for philly. It's like using 1942 Don Julio's to make margaritas. Enjoy that steak medium rare with a nice bottle of red, under the moon!

I just heat up a bit, coat with cheap oil, let oil heat up, scrape clean, wipe corners and grease trough with paper towel then start cooking. 👌👍🥓🥚🥞

I really like to see the "Born, Raised and Harvested in USA" as most beef and pork processed here is grown in another country but shipped here for processing and receives a USDA stamp making you believe that you are buying meat raised in the USA. Research COOL labeling in meat.

That’s what I was thinking. $47 just for the meat and all he got was 2 sandwiches out of it. For that kind of scratch I’m going to a restaurant and get them to do the work.

@@brennanj7843 No work at all and a lot of times I can do better cooking at home. So many times we go out and the food kinda sucks. I have no problem buying the best I can find/afford and cook at home and enjoy. Cooking is entertaining and you need to eat, so cook. Thank you for watching

@@baileyka For $15 you can make worlds best steak sandwhich. You don't need prime to make a good sandwhich, The trick is to buy USDA choice, not prime and look for the most marbled choice cut on the rack. Some of the prime is over sold (over graded), and some of the choice is under sold (undergraded). Prime cuts are not commonly sold anyway, most folks in USA have to drive 100 miles to find prime beef for sale.

It's USDA prime meat, expensive but very tender and flavorful. How about Japanese breed Wagyu beef available here in the USA very expensive and hard to find but so good. thanks for watching.

@@BrianEibner usda is the standard a butcher uses for cleanliness etc. Prime is the quality of the beef. We sell our beef at $3.5 hanging weight. You might pay $7 lb after the fact. You could save a ton and help a farmer out.

@@BrianEibner I can look at it and tell. But the hang time in the cooler is more important. 6 weeks makes a very tender beef.

@@DustySmalls So a bias grader, no offense but I'll stick with the unbiased grader. I went to meat cutting school in 1987, I worked in the grocery store meat departments as a meat cutter then management for 12 years. One store we were the largest volume store in the state of Minnesota, bought and sold lots of meat and sausage making. Thank you for sharing. It would be great to raise your own, I just can't.

Not really, the bun side (right side) the burner was off and then with the meat sliced thin and I did want the meat over cooked. Thank you for sharing and watching

You purchase prime meat for the fat. Better off getting choice or even select grade if your going to do that save yourself money. Any butcher can cut that meat up for u so it’s ready for the freezer b4 u cook it I know those true philly kids say the only way to make a cheese stake is with frozen first meat too keep the juices from running out

Select are you kidding me 🤣🤣. I bought Prime grade for the marbling, flavor and tenderness not the fat. I was school trained in meat cutting (when there were meat cutters) in the late 80's and worked in the field for 12 years. 🍻🍻
