i definitely recommend mixing the lime and the garlic for the sauce together first and letting it sit for about 10 minutes with just those two ingredients. it adds a whole new depth to the sauce. basically what youd do with hummus when you start with the lemon and garlic.

@A 2nd Opynyn it mellows the harshness of garlic and gives it a more blended taste. Im not a chemist or chef, but it was in a book from a Michelin chef who recommended it. Honestly took my hummus from compliments to requests.

If you want to bypass making your own tortillas, the uncooked Tortilla Fresca tortillas in the refrigerated section at Costco are a great option. Just heat them the same way as in the video.

When I don't want to make flour tortillas, I use I use a brand I buy when I go to a little Mexican produce stand called (checks package) Leyva's. I don't think I've ever seen them in grocery stores but they're the best bagged, unrefrigerated off the shelf commercial tortillas I've ever eaten. The Mexican lady who owns the stand also sells corn tortillas with a Mexican flag on the package which are also better than any corn tortillas I've ever bought from a grocery store.

I made this yesterday for my birthday dinner and it was awesome! The tortillas were so easy to do and turned out fantastic. The chicken was super flavorful and the cheese blend gave it a great gooey texture. The chipotle ranch was a perfect addition and really made it shine. I added some roasted/lightly caramelized onions to the quesadilla to put my own small twist. I will definitely be making this again, and making tortillas regularly from now on.

@@ImVonKiron_ I've not eaten at any high level Mexican restaurants cuz I live in NW Ohio, so, no not for me. I'd guess the Mex restaurants around me just buy theirs also. They just have a texture and flavor I can't describe other than they made me realize that a flour tortilla doesn't just have to be "the thing that holds the good food". The tortilla WAS a part of the experience.

I Highly recommend butter instead of oil when you put the quesadillas into the pan. It's so much better!

I've found that butter tends to make the tortillas a bit soggy and not as crisp as using Canola Oil. I will sometimes throw a pat of butter into the pan once the Quesadillas are finished and ready to remove from the pan. Just a little and then spin them through the butter as it melts. Then remove and cut.

I tried yesterday evening, and it was GREAT!! Also, i did the tortillas by hand, and it was really fast! The only problem is that in Italy it's not easy to find pepperjack or even mild cheddar. So I ended up using cheddar "sottiletta" (slice) and provolone :) Thanks bri!

Made these for dinner last night and they were excellent! Marinated grilled chicken full of flavor. Homemade tortillas easy to prepare and with the exception of trying to regulate the temperature on a new range turned out perfect. I highly recommend the mild cheddar (I used hoop cheese) pepper jack and provolone cheese combination. The sauce is perfect for dipping! This is a winner! Every element working perfectly together!

I started making homemade tortillas (corn and flour) this year and they are totally worth it. Store-bought flour tortillas are loaded with sodium, but I can make them at home with way less. I use my stand mixer and tortilla press...for flour tortillas, I also use a rolling pin (the press makes them thick and too small for burritos and quesadillas).

Homemade flour tortillas are stellar! We do them fresh per order at our tiny taco trailer, pro tips below: - We add a bit of baking powder, just enough to remove the transluscent sections you sometimes see on flour tortillas. - For smaller tortillas you can use a pasta roller, and pass each dough ball through twice, once on a wider gap, and then again on a narrow gap. Makes it easy to do larger amounts. - Try cooking them in a gas fired pizza oven, they get lovely charred parts. If your protein is pre cooked, you can even lay it on the uncooked tortilla and heat it at the same time.

I ran out of organic sunflower oil, tried organic soybean, both inside the tortillas and frying, and..I think the organic sunflower oil is a super terrific choice. The soybean fried ones seemed to absorb a bit of the oil, and were more chewy, (maybe my temp was lower, but, still..) whereas the sunflower oil ones are light, flaky, crispy, and not a hint of being oily. Every time I used organic sunflower oil the quesadillas turned out fantastic!

I use the same technique for cooking my tuna melts. I put a dish on the sandwich in the pan with a can for weight to get it evenly browned and the cheese all melted (I like a lot of cheese).

Hey Brian! I used the homemade tortillas (double batch) to make some creamy green chicken enchiladas..I was afraid at the last minute they’d be too tender to hold up under the sauce, but they held up great! Best enchiladas I’ve made..I had to use some canned Hatch medium green sauce for a sauce shortcut, other than that, all organic stuff chopped poached chicken, red and white onion, red bell pepper, bunch of chopped cilantro and stems, coriander and cumin, black pepper, sprinkle MSG, little sauce inside with some Mexican blend cheese, sauce in pan and over top with more cheese and some heavy cream for fun, top w more cheese..bake hot until fantastic..

Oh yeah..bake uncovered..depending on how much sauce/moisture you put inside and around them..I did fine at 375 convection (350) for about 40-45 minutes, checking after 35 minutes..on a rack close to the top..

Love your videos Brian. Really appreciate you sharing we only need to cook chicken to 150-155 degrees. Most people overcook chicken. Many of your videos include a homemade bread, tortilla, etc…. To be honest, very few people are going to make their bread, tortilla, etc… from scratch. Maybe you could include store bought, premade alternatives. I mean, you offer Dukes instead of homemade mayo,,,why not do the same for the bread/starch/carb.

Mexican here. If you want tasty tortillas from the grocery store, get TortillaLand ones. They are found at the refrigerated area of my Kroger and Walmart. I live in Columbus, OH, for reference. These taste exactly as what you can get from a grocery store in Mexico. You're welcome.

Hey..I still like the organic sunflower oil, they turn out great, but..I tried using really hot water and subbed in butter for the oil, and…I think I’m doing butter from now on, at least for the tortillas that I use fresh for stuffing or eating out of hand. Super pillowy, beautiful texture and flavor with organic butter! I’ve started my corn tortilla journey, bit of a learning curve there and plenty of practice to come, but the King Arthur organic corn masa has a lovely fragrance and flavor…also, the Lady n Pups channel has a clever super thin tortilla method where she spreads a roux of cooked flour between flour tortillas and rolls thin, then cooks, then peels them apart for ultra-thin tortillas!

Interesting cheese choices but if you don't mind me making a suggestion, try 50% Pepperjack, 20% mozzarella, 15% Queso Fresco, and 15% mild cheddar. It gives you everything you need in a balanced mix.
