Hey Bri! Made the second recipe tonight. The cheese I bought was super salty and overall not good but the dough came together really easily (albeit a little stickier than your example, but humidity is super high here in south FL) and the bread itself was really flavorful. My awful cheese didn't really melt like yours but this was a good thing as we just pulled the small cheese pockets out and ate the bread. Delicious! Can't wait to try again with good cheese. 🤙

ok. this was awesome. I made the second cheese bread…my dough lacked all those crazy gas bubbles, so gotta figure that out, but the end product was amazing. I used 2 yr aged irish cheddar and ran out for the second loaf so pulled in spicy Asiago, both came out great. Also I made the same dough tonight and switched it up into thin poppy seed breadsticks and it worked out great. That dough is pretty versatile.

You should try brazilian pão de queijo (literally translates to cheesebread). It's a way more forgiving recipe than the gougere and it has a highly addictive chewy texture from the tapioca starch that it's just insane.

Yes Sir! I've only seen (well known of) one other person to take a bite of cheese like that, and it was me! I say "Known of" vice "seen" because it was in front of a mirror, or being filmed. For that move alone I would normally say "Brian for President!". But then you would be getting all of your meals cooked for you, instead of sharing all of this culinary greatness with others. So, it's official I now nominate Brian Lagerstrom, food dancer from the far reaches as, "Lord Of The Cheese Wheel"!!!! And these recipes, oh so awesome. And with those little caverns in the cheese bread, just tells me one could add just about anything with each little block of cheese, and have it left behind in the cavern.

Hello! Hey please do basic milk recipes! Sour cream, creme fraiche, buttermilk, ricotta and mozzarella. Of course I have organic Simple Truth (Kroger brand) whole milk but it is ultra pasteurized so I can use it to make ricotta but NOT mozzarella! Ugh. My next town day isn't until Sept. 1st. My dough in the tug and folds was VERY sticky, and I was worried to add too much flour to remedy the situation, but it didn't hurt. I used 8 oz of 8-year aged cheddar for one of the flatbreads because that happens to be what I just bought at the farmer's market. It was fantastic! I used Trader Joe's Gruyere Cheddar mix for the other, but I haven't tasted that one yet. It was a hit for the whole family.

Making this now and my dough is very sticky as well! Did you put it back in the mixer for a little and add more flour there? Or did you incorporate it in your stretch & folds?

Not going to lie, that's an ingenious way of making a piping bag without having to invest in one! Both of these look pretty nice - the method of the cheddar bread makes me think of how an apple fritter is made, only swap out cinnamon apples with aged cheddar - definitely some good stuff there! For someone who doesn't have a stand bread mixer, can one mix these by hand (as in using the sturdy spoon method)?

I live in New Mexico but I'm a transplant I came from Pennsylvania the southeast corner outside Philadelphia the local diners in the area made a cheese bread that they would offer for before dinner they had cinnamon bread and they had cheese bread I never did get around to ask him to make me a hybrid of both :-) But it wasn't savory it was sweet it was a warmish usually cold but sometimes warm dinner bread but it was sweet like a Danish Do you have a recipe for that? Because that doesn't exist out here in New Mexico and I really miss it :-)

Cheese straws are classical rough puff pastry which is cut into strips and covered with (usually) cheddar before being baked. So 1970s British 'drinks and nibbles' it hurts. You wouldn't get the crunch with the choux pastry that you do with the puff but I daresay cheesy éclairs would be no bad thing (especially if stuffed with something contrasting)

@@BrianLagerstrom : Hey Brian: Just checking back now --- Cheese straws are long narrow strips of dough with cheese (used to be cheddar -- but probably could be any sharp, hard cheese) the dough is twisted into a spiral and then baked. Was thinking about this dough although it may be too mushy to twist. Anyway, was thinking of this dough for cheese straws and then the toasted panko crumbs for crunch! I am a big "cruncher"....if I don't crunch I haven't eaten! Just sayin' You might want to take a look at Ina Garten -- she is out here in Easthampton (yeah, the "Hamptons") Ina is great -- no la-di-da airs --- very down to earth. Her webpage is named Barefoot Contessa after the shop she owned for years and then sold to her employees. Ina has a recipe for cheese straws so you can get a look at them --- and maybe some ideas. You can't go wrong with Ina!....and you, too! And awaiting patiently for another adorable kitty cameo appearance...no pressure! 👍👍✨✨👍👍✨✨👍👍✨✨

Hi Brian, thanks for sharing this recipe. I will definitely try these (Flatbread first, because I only have Cheddar cheese now). However, since I'm from Indonesia and Gruyere cheese is not that common here and can be very expensive. Can I change using Gouda cheese for the Gougere? If so, which one should I use, young, matured, or old?

I made the recipe for the Cheesy Flat Bread. I went to your website and printed the instructions and your quantity of Cheese is wrong in the written recipe ( on KZbin too). Ingredients say 1 - 8oz aged White Cheddar. Based on your video and my poor results splitting the 8oz between two flatbreads it should have 2 - 8 oz or 16 oz and a 8oz per flatbread. Your recipe is amazing the bread and the texture of the flat bread were amazing. I was just really short on cheese because I divided 8 oz between the two breads. Please, Please, Please update the written instructions so no one else has to suffer due to a cheese shortage. Awesome Recipe!

Hi Brian, in cheesy bread , you are using 14g of salt. is that kosher salt ? we tend to eat very low amount of salt and with this much cheese won't bread be salty?

The Gougere reminds me of Brazilian Pao De Quiejo. I love making those so I'll hafta try making these. Is there a method that doesn't use a stand mixer? Can you use a hand mixer instead?
