The liquid ratio from blanching/boiling is enough to balance the ramen seasoning. I think that’s a tamarind or diluted fish sauce they add.

That is literally a staple in my house, the ramen is very popular to eat among the Vietnamese community. Gosh, if that stall was around my house, I’d order it everyday or multiple times per day. Fresh & savory, mouthwatering.

This is not "Thai Noodles" but in Thai we call YUM MAMA, mama is a brand of instance noodle and yum is mean spicy salad, so YUM MAMA is to cook yum by mix mama and other ingredients and "yum ingredients, chili spring onion ETC., It's "YUM" It's not "NOODLES"
