Thank you for showing how brisket is really trimmed! I don't live in Texas anymore so I gave up on ordering brisket when going out to eat. It seems everywhere else trims ALL of the fat off before smoking and I'm never happy with the brisket so I gave up. I used to love this one chef's brisket but he said people complained about fat being on it so he trimmed it all off now. I told him to tell those customers if they don't like fat then they don't like brisket or pulled pork and to just order bbq chicken. Hahaha
