I have lived in Texas for 40 years. Lockhart, Texas is the mecca of BBQ. Black's is my favorite. The beef ribs are amazing. Everyone talks about these new places in Austin. Black's in Lockhart and Terry Black's in Austin are the best in my book. True old school BBQ.

Stopped in Blacks just last Tuesday, 07/12/22. Dined in on brisket, port ribs and sausage. All were very very delicious. Brisket is melt in your mouth (we got fat brisket). Also brought 1/2 lb brisket home. The ribs were also some of the best I had. they didn't seem to have a lot of rub but they were excellent!

Exactly...in all these videos (Franklin's, Louie Mueller) they don't tell you everything. There's no way a brisket ends up that juicy (on the final slice) just doing what he showed on this video.

For those wondering, from their blog "We typically start spritzing 3 hours in, once the rub has set and the outer surface of our brisket is nice and dry. Worcestershire sauce is one of those spritzes. ;) " ACV being the other spritz.

So 12 hours total ? Or 20 hours ? I’m looking to make my first brisket and I want to cook it exactly like yours. I’m retired veteran so I want to make sure I follow the instructions completely.

It depends on the weight of the brisket. They usually cook for 1 hour 15 minutes per pound. That’s what they told me when I asked them at their Austin location. Super friendly folks and I’m a lifetime fan for sure!

Anyone know what the specific rub is that they use. I know they spray intermittingly with Worcheshire Sauce and Apple Cider Vinegar.

They use their popreitary brisket blend. I buy it on their website or in house and it’s awesome. It makes for some delicious brisket burgers

Because with a traditional offset. The heat rises from the firebox to the collector and out the smokestack. If he had heat directly underneath the brisket, then he could possibly start with the fat side down. Hope that helps.

@@apexpredator40 True. The heat passes over the top of the brisket in a offset. Drum and pellet smokers need to cook with the fat side down.
