I agree, but it's kind of like comparing apples to oranges. Chicken and dumplings is more of a cool weather comfort food, while chicken fried steak is an eat any time of the year food.

I am not certain how I ended up here but I'm so happy that I did. I'm an American expat living in Australia. I'm also from the south so I grew up on variations of chicken & dumplings or chicken & rice. The one thing I've never seen is any type of milk or cream put into the chicken & dumplings, but it looks like it would be really nice. I'm an older single lady but I love trying out new recipes and I've recently made some new single friends in my neighborhood and we've decided to start sharing dinners a few times a week. That's helpful, it's hard to cook for just one person plus it's more economical.

My Norwegian grandma made THE most amazing chicken and drop-dumpling soup. You might think it's relatively simple, but she was very exacting and it's so worth it to follow the recipe to the tee. We also make my Swedish grandpa's delicious stuffing recipe every year for Thanksgiving. Everyone who's ever tried it has sung it's praises. Look, if you need to use a bunch of butter and cheap meat, there's no better place to turn than a Scandinavian grandparent.

My entry into the dumpling war is chicken and rolled dumplings.My grandma made hers with chicken, broth and dumplings nothing else. They weren’t a soup, they had a thick gravy similar to beef and noodles. She used a good fatty stewing hen and hot broth in the dumplings. Never learned how to make the dumplings unfortunately and I really miss them

I’m an American who has lived in several parts of the country - Texas, California, the Midwest, and the Northeast. I have never heard of dumplings made on the bottom of the pot. Dumplings need to be on top, exposed to the air. Otherwise they can get gooey and soggy. Chicken and dumplings is very nicely paired with cranberry sauce as a relish/chutney.

I did read through the comments before making my post, to avoid putting my foot in my mouth. 😉 On the history of Chicken and Dumplings, the hen that had gotten too old for laying eggs was a candidate for the pot. The extra young roosters that were hatched were either put in the pot or the old ornery & mean rooster was in the pot on Sunday and one of the young roosters became the 'new' Rooster. A rooster is also a leaner chicken so his meat is tough and takes longer to cook. When you had to thin out the flock, Chicken & Dumplings was on the Sunday after church dinner menu. 😀As many said, the chicken was put in the pot of water to boil until done & tender, then removed to cool and be deboned. The chicken stock was then brought up to a rolling boil and the dumplings were dropped in (rolled or drop dumplings) the meat was put back in to heat up and when the dumplings were done, they were served up. Vegetables were cooked as separate dishes and served. The flour shed from the dumplings was the thickener. So chicken & dumplings is one of the ultimate meat, bread, and gravy in one dish meals. 🙃

That is one amazing looking pot of chicken and dumplings!!!! I love how you said, enter the dumplings war! I grew up eating my mother's family recipe of "Danish chicken and dumplings". Our dumplings are made with a "pate choux" type recipe instead of a bread/flour recipe. I make the dough and squeeze it through an open piping bag, cutting the dough with kitchen shears into about 1 inch long pieces. They initially sink in the broth, but when cooked through they float to the top making it easy to know when they are done. My dumplings are dense, eggy, like a cross between a biscuit and a noodle and oh so satisfying. My family requires me quadruple the batch of dumplings otherwise it becomes a war at dinner over who got more dumplings and left "none" for everyone else! LOL

You must realize that as a nation of immigrants we have always taken the recipes of the immigrants, played with them, put our own spin on the recipes and thus you get American CAD. That and many other "American" foods. ;-)

My dad was born in Illinois in 1930. Chicken and Dumplings was one of his favorite meals. He remembered his mother making it as a small child. He said she would make it as the third meal for a chicken. My grandmother immigrated from Holland just a year or two before he was born, and they typically had small meat portions with meals. Their large family was very poor, and could get several meals from a single chicken. After dispatching the chicken, they would usually eat the meat of the chicken for 2 meals. When they were down to just the carcass, she would throw the already cooked bird, bones and all, into a soup pot and simmer with veggies and herbs all day to get a good broth. This either became chicken stew, chicken soup, or chicken and dumplings - it depended on what food they had available at the moment. Money was very scarce and town many miles away - going to the store for an ingredient just to make a specific meal was not in the realm of possibility for them. But dad said “on good days, when she had plenty of flour, we got chicken and dumplings“. Once her broth was done she’d strain it and go through the chicken carefully, pulling any bit of meat remaining on the bones. That’s the meat that ended up in their dish - they didn’t save meat for it, or dispatch a chicken specifically for the dish. His mom added any veggies she had available (potatoes, carrots, onion, celery, parsnips, peas, turnips, etc). He said no two chicken and dumplings were ever quite the same because it was a meal made with what’s left. The flour not only provided the creamy gravy feel to the broth, but it contributed the tummy-filling dumplings. They also made it with any birds they brought home from hunting. He used to laugh and day “pheasant makes a pretty good chicken soup!”

I think those Meck points are fair. I’m (one of) the person/people who said, “love in a bowl.” It is. The reason I think it’s fair is: CAD is not exactly something you’d reach for on a hot July afternoon. Its appeal is largely seasonal. It’s for January. In the Midwest. After you’ve been pheasant hunting. And there’s a fire in the wood burning stove. And your insulated socks are working just fine. THEN… it’s about as perfect a food you’d ever want. Iced tea, too. Finish it off with pecan pie. That’s called, “living.”

I didn't grow up eating chicken and dumplings, my mother thought that dumplings were revolting. Too much a peasant food for my grandmother, passed along to my mother. Once I moved away from home however, I did discover that it is quite good. We make ours with chicken, and the broth, salt and pepper, and canned biscuits for the dumplings. I've never seen it with the veg and milk added, but glad you and your family enjoyed it!

My grandmother taught me to always put nutmeg in dumplings (drop type). If I have a really fat roasting chicken, I skim the fat and use that in the dumplings.

4:48 genuinely love it was more when it’s thicker… but… just as an fyi, after a day or two you aren’t really going to find much broth because not only do the dumplings continue to suck up the broth, but it also thickens up because of the flour dough. It goes from a soup to a stew as you eat it. …it’s essentially just chicken noodle soup with dumplings in it, unless you make it from scratch, which I have to imagine is so much better and is a fundamentally different experience than just using canned soup.

Related to this in a mildly tangential way. you should try pennsylvania's version of pot pie. its just egg noodles, potatoes, ham hock and ham gravy. the potatoes are diced small. also, potato soup with rivels. kind of like the chicken and dumplings in that there is a milky creamy soup, and you chop up onions, and potatoes, add pepper, and some garlic if you want. but you don't do the celery and the carrots. there's butter in it too. and the rivels are like dumplings, but much smaller. there like little teeny bites of dumpling. the purpose of them originally was to extend the soup, because people didn't have a lot of stuff to make the soup. and now its a feature. there's a alternate version too called loaded potato soup. and it has all of the previous things, (rivels are optional for this) but it also adds sour cream, bacon, and shredded cheddar cheese.

There's also a battle about if you put vegetables in it or not. Some do, some don't; I personally was raised with no vegetables in the stew, but served on the side. Also as an FYI, hens do eventually stop laying eggs, so their value is then in being made into dinner. But yeah, the hens were usually old and "tough", generally left in the yard all their lives. They would need to be stewed for a long time in order to soften them up.

I am super impressed! And jealous - I wanted a bowlful of it too. My father made the drop dumplings, but I like to roll mine. My Daddy - not my mother - was actually the best Southern cook. He had to teach her how to cook, and mostly she heated up cans of whatever. His mother, “Maw,” raised 4 kids on a farm with Paw, and no running water. You just taught me something though. Next time I’ll cook my chicken overnight in the crockpot.

You ought to try the other type of Chicken & Dumplings. Semi-different, it's an egg dough that can either be rolled out thin and cut into squares or spooned out and "dropped" in. There's also not the condensed milk added to it, and normally seems to be more of a thing to serve on a plate than a bowl. For major places that serve it, oddly enough, it seems that Golden Corral has it, though they go much thicker with rolling it out than most places in the Cincy/Louisville area that have it. Always served with mashed potatoes, and most have cranberry sauce and peas as well

I think the rolled dumplings edge it out for me slightly but that's only because the drop dumplings can get a bit undercooked making them gummy instead of nice and fluffy. those looked fantastic mate. I've to 2 similar kind of dishes but they are deserts. My old man would make for us -- also great names 1) Apple Pan Dowdy (and various other spellings) It's like the chicken and dumplings but the chicken is apple and it's covered in dumplings. Some recopies call for pie crust but my old man would just use biscuit dough .. baked in a dish so good. I think the mech fam would like it a lot. Also it's kind of old school ' Apple pan dowdy (or pandowdy) is a traditional American dish which saw its heyday in the 1800s and early 1900s.' 2) Huckleberry Buckle -- this is like you mix a cake batter in with huckleberries into a baking pan -- kind of like a coffee cake but dominated by berries. It's huckleberry season now so I'm gonna make some. Maybe you could use currents? if you don't have any .. but they have seeds right?. I'm sure it would work with any berries. I'm not going to give any recipes but let your new IT fellow to find the best ones in the interwebs. The Pan Dowdy is most like a chicken n dumplings and I think it would be great if you tried that one. If you can't get huckleberries it's not a big deal. I don't know if they grow in UK. They are SOOOO good though.. you just have to to harvest them before the bears get to them! Love your channel and I'm going to try your dumpling recipe for sure when it gets cold!

After she passed away, I was in a panic. Itokd myself I couldn't go the rest of my life without chicken and dumplings! It took me a few years to get them to taste like my mother's, I finally did it. My grandmother made a similar dish here in Pennsylvania called Chicken Corn Rivel soup. Very similar preparation with sweet corn added. The rivels are drop dumplings made from just flour, egg and a little salt.

Chicken has been eaten this way for a long time. It's not new an a product of mass production. For every future laying hen that hatches, a future rooster hatches an usually ends up on the dinner table. Also, those hens only lay for a few years. An those old hens that no longer lay end up on the table. We have a saying, "tuff old bird" for a reason. Old birds have tough meat. To make them edible, they are boiled. So boiled chicken is one of the oldest meals in history. When someone started dropping bread in to this boiled chicken stew an invented chicken and dumplings, no idea. But it was likely long ago. Salt an pepper are the only thing traditionally added other than the raw chicken, water an bread dough. But milk is a good addition. But no, you can't really use precooked chicken. The boiling of the raw chicken is key to the juices soaked up in the dumplings.

that's really nice. but what i grew up with, was basically, you boil a chicken, take it out, then make dumplings in the chicken water. the dumplings are flour, salt, and baking powder, maybe butter or shortening, and then rolled out and cut. a much different thing than this. i like both.

My grandmother made chicken and dumplings, but it was also known as chicken Paprikash. Creamy but with spicy big cherry peppers broken up it. It was my mother's favorite dish, and I loved it too. She made the dumplings using bread, milk, eggs, and flour iirc. I think they're a spin on 'knodle'. Why I'm mentioning this? I don't know. This looks fantastic. You're such a good cook.

If you are in a hurry, you can always get canned biscuits (at least in the US) and roll them out and cut into strips. The cheapest canned biscuits work best, the ones with all the flaky layers tend to fall apart.

Its so funny to me that you and Mrs H made similar meals an hour apart. I , personally don't like dumplings, but love pot pie. Its just a me thing , its basically the same. When I make pot pie though, its pretty much just a way to use up Leftovers. Roast a turkey or chicken, make gravy , throw in the leftover veggies , put it in a pie.., boom new meal

Many of us MidWesterners like ours with fresh green peas, other with peas and carrots. I would never use evaporated milk as I dislike the flavor intently, rather sour cream or heavy cream. Some of us use celery, onions, potatoes along with the peas and carrots, I like to add sweet peppers and a small hot pepper as well. Thyme and marjoram maybe celery seed.

Chicken Soup isn't a mysterious medication. Besides the hydration the body needs, a sore throat is basically swollen tissue pressing against the nerves causing pain. The salt and dense oils in the broth draw out extra water from the swollen tissue through osmosis, reducing the pain. The salt might also help reduce bacteria but I don't know for certain. But any salty brothy soup will do the same thing as chicken. I prefer Cream of Mushroom - but Minestrone and Beef Barley are also good.

A heavy cream or half and half can be used instead of evaporated milk. An this, like with most things can be customized to your hearts content. I have had dumplings that incorporated garlic powder to give them more depth of flavor. I have had it with cubed potatoes in it. I have even had some made with hatch green chili's. I am glad your family enjoyed it!

As far as chickens not being eaten for meat in the past, in the south we have had squirrel and dumplings for generations. Maybe chicken was substituted when they became commonly eaten and more popular.

you can also get the small can of pillsbury biscuit dough and rip them up to put in the dumplings. theres also a few tweaks depending on where you grew up. i grew up with just chicken and dumplings no extra veggies. a bit more creamy soup like. if i had to decide between dumplings and biscuits and gravy i would cry

For the record, rolling an cutting out flat dumplings takes almost no time an is well worth it. The liquid get all the way through the dumplings. 3 minutes extra work maybe. My grandmother did it with a bottle an a fork. I just rip peaces off an run them through my pasta roller attachment on my stand mixer.

That's more black pepper than I like. For some heat, try a dash of cayenne pepper. It goes very well with chicken.

While I love tons of black pepper, I also tend to put a few jukka jukka's (Justin Wilson reference) of Tabasco sauce in my serving of chicken and dumplings; so I understand your cayenne choice. I have been known to put a dash of cayenne in many a dish that my "I can't do hot things" family have loved.

I wish you had landed on the Delmarva style chicken and dumplings recipe. It is simple. No veggies. Just a boiler chicken (used to be old hens who had stopped laying eggs but were good for a stew), dumplings and simple seasonings. Salt; pepper but I do like a pinch of dried sage. I grew up in the Delmarva region where the recipe has been around for nearly 200 years. I think it was just a simpler version of the chicken bott boi (bastardized into pot pie) that the Pennsylvania Dutch brought with them from Germany. The dumplings are generally similar to spaetzle without the eggs and much bigger and thicker. I don’t like “fluffy” dumplings aka dropped. Chicken and slippery dumplings are actually on my menu for this week. Hubby is going to pick up a Costco rotisserie chicken and I pick the meat and then simmer the carcass for a light stock. No carrots, celery, onions, dairy or garlic belong near the mid-Atlantic version of this most excellent dish.

You definitely got a good recipe for chicken and dumplings. I am glad that you liked it. You reminded me of something when you said funnel cake. You need to try Elephant Ears. To me, they are way better than the funnel cake. I can't remember if you tried this one or not, but I keep thinking you haven't yet done so. Fried Green Tomatoes. I would try it classic. However, I would slso recommend trying it as a BLT. (Instead of raw tomato, the fried green one and if you can get it, a chipotle mayo instead of regular mayo). I also hope you try Pork Tenderloin Sandwiches soon as well. I like cheese on mine, most people are just yellow mustard, I prefer a spicy mustard and some sliced Gouda or Cheddar if I can't find Gouda. Some like pickles, I hate pickles, so I go for caramelized onions. I would go for one that is classic and one that is like what I do once you make the pork tenderloin sandwich. (2 sandwiches are enough to feed all of you. They are that big).

Looks very good. My only suggestion is that you pull the chicken off the bone in large pieces, and then dice, or cube the chicken. I personally do no like shredded chicken, but it tastes the same either way. Very good job.

chicken n dumplings can be either way soupy or creamy. as a hoosier i couldnt pick out one above the other
