CHICKEN n DUMPLINGS Y'ALL

CHICKEN-N-DUMPLINGS
10 to 12 cups CHICKEN STOCK
1 CHICKEN boiled, deboned and chopped into bite size pieces
Dumplings:
3 cups ALL PURPOSE FLOUR
4 teaspoons BAKING POWDER
1 teaspoon SALT
1 cup CHICKEN BROTH or STOCK
4 tablespoons vegetable or corn OIL
3 to 4 tablespoons BUTTER
1/2 cup MILK
Mix dry ingredients then add the liquid. Stir to bring together and roll out onto a floured surface very thin, approximately 1/8" thick. Use a pizza cutter to cut into 1-1/2 inch strips.
Boil and debone chicken. Strain stock. Bring stock to a boil and add dumplings a few at a time and let rise to the top before adding more. Cook for five minutes after adding the last dumpling. Turn on low and add the cooked chopped chicken, a few tablespoons of butter and a pour of milk. Let warm and serve. I make cornbread and peas to accompany them.

Except for the thickness of the dumplings, this is exactly how I cook dumplings, including the extra milk and butter at the end! We do make them about 1/4” thick and cut the squares a little smaller. I've been cooking for a lot of lot of years I'm 69 years old and I don't even have a rolling pin. I do make homemade dumplings and I do need a rolling pin please tell me how to get one I found one but it was plastic it did not work for me I want a wooden one. I was just curious how others make their chicken and dumplings, because I've been very sick for a very long time, and now that my health has started improving, (Praise God above!!) I've been gaining strength to start cooking again!! But I'm out of practice! Chicken and dumplings is definitely some good soul food that we all love and enjoy, that will always bring us great family memories!. Once I started watching you cook though., well you stole the show!!. What I mean is, your demeanor is so pleasant!!. I see something in you, that we just don't see enough of nowadays. Back when I could eat gluten products, I've used the premade pie crust that you can buy rolled up from the refrigerator area of the grocery store. Anyway, I just rolled out the pie dough and cut it into strips for my dumplings. Works great !!

My Moms dumplings were dropped by tablespoon or a bit larger. She dropped them right on top of the liquid into the pot after boiling the whole chicken, then taking the meat off the bones. She’d put the lid on after dropping the dumplings on top. She’d tell us not to lift the lid up till the dumplings were done!

This is my first time watching your show, and I was about to make comments very similar to what Juanita stated in your pinned comment below. I knew I couldn't improve on what she said. She said it all beautifully. I'm definitely going to subscribe. As I write, I am in the process of making my version of chicken and dumplings. Living up north, I think most of us tend to make drop dumplings. I also add onion, carrots, and celery. Every time I make it, I tend to make it differently but it always seems to come out pretty tasty. I'm hoping this time around, it turns out well too, as I am making a large batch to share with other family members (while also keeping some for my husband and me. 😉) I always enjoy watching and learning how others make their version of similar recipes and I really enjoyed watching your video. Your video was lots of fun to watch but the best part of this video is your mama's dumpling recipe! I made them and the recipe is fantastic! Kudos to your mama. Best dumplings EVER!!! I did not add the milk or butter at the end because I'm lactose intolerant and besides, my broth is very flavorful. (I added 1 medium yellow onion, cut into quarters, 1 carrot, cut into quarters and 1 Tablespoon mixed dried herbs and seasonings to my chicken as it cooked, along with salt and pepper). These dumplings were better than my mamaw's recipe which I had been making all my life. Thank you for the best dumpling recipe that is now my new family recipe! Hugs for sharing.

My husband and I take turns cooking for us and my daughter and two granddaughters who live down the lane. We sit down together each evening for a meal together. I made these and they are AMAZING!!! Shawn reminds me of my husband he used to do the same thing when I have him taste something and I could never surprise him either Amy he would always figure it out I sure do miss him on the 15th will be gone 14 years it’s hard miss him every day but I have my memories and God gave me a blessing with him because they didn’t expect him to live past the treatments and he was cancer free for 10 years

Hello there. Well I made this today and it was delish the only thing I did was I split a chicken and I added thinly sliced carrots I’m weird I can’t stand all white so it was a little colour but it tasted wonderful.Thanks for all your great recipes. You sound much better than your gift opening video our daughter had covid she is a vice principal in one of our schools and got it from the kiddo’s she still feels yucky on and off.
