Mate, this is Australia, not “la de da” Paris or something. You make it any way you bloody like! Although whipped cream does taste better. And is perfect with a scoop of vanilla ice cream. Crusty on the outside and soft on the inside: that's Australia all over.

It looked lovely. As others suggested whipping the cream yourself is generally how it's done. I suggest adding some passionfruit next time drizzled amongst the berries. I find this helps with the sweetness of a Pavlova. Enjoy your next adventure.

I was going to ask what happened to the passionfruit. That adds some acidity to balance out the sweetness of the other ingredients. Sliced mango also helps.

For those saying put sugar in the whipped cream..yuk! Pavlova is sweet enough already. Plain whipped cream and plenty of fruit to counteract the sweetness of the meringue.

Yeah, I've never put sugar in the cream, nor do I know anybody that does that. It's already so sweet it doesn't need extra sugar, but I do add vanilla essence to the whipped cream.

Nice work. I bought a pav base this Chrissy. I usually grab a 600ml thickened cream and whip it and pack fruit and some passionfruit pulp on top. Yours looked delicious.

Really have to make your own whipped cream. 300ml Carton runny cream, teaspoon vanilla essence & a heaped tablespoon powdered sugar. I find it best to put bowl & beater attachments in fridge as cream whips best when really chilled. Beat till you can lift beater out of cream & it forms stiff peaks. This takes pavlova to next level.

Exactly. I fully agree. If you use a small quantity of icing sugar, it keeps the cream stiff. It's a stabilizer. If you eat it the next day, it doesn't turn into a runny mess or collapse like thickened cream does by itself. The cream stays thick. Icing sugar doesn't make it a sugar overdose at all. I wouldn't use normal sugar. Then that would be sickly sweet. So yeah, a large container of thickened Cream, a small dash of vanilla, about a heaped dessertspn of icing sugar and beat it till thick and stands up by itself. Add more if necessary. I never measure just tip some into the bowl. Cream stays perfect for a few days or till chuck out, lol 😁that's if it lasts that long and not all eaten 🤣

I made a raspberry coulis to pour over. We ended up putting the pavlova in bowls, then topping with strawberries, blueberries, double cream and coulis. I forgot there was ice cream in the freezer.

The extra trick is to get a small can of passion fruit pulp and pour it over the pav after you dress it with fruits! 😉 adds a nice tartness to the sweetness. 😅

you can put whatever fruit you want on there but as far as i'm concerned it must have passionfruit pulp on it the tang offsets the sweetness. you can whip the cream yourself with some icing sugar or for a quick and easy just buy fresh cream in a spray can. you can slap together a pav in 10 minutes with a bought base spray can of whipped cream, tin of passionfruit pulp and fruits of choice and it will be just as good or better than a home made one.

For your first try of pavlova you did really well. Next time whip the cream yourself and with the fruit you used, add kiwi fruit, passion fruit pulp and banana. The kiwi fruit and passion fruit will help counter the sweetness of the pavlova. There is no wrong way to celebrate Christmas, it was so heartwarming to see you enjoying the weather as it is such a different feel than Christmas in Europe, Im from Finland so I understand the difference. I use about twice as much cream as you used, and probably 2-3 times as much fruit literally ‘dumped’ on top. Pavs are lovely when fresh, but even stickier and more gooey when you have the leftovers out of the fridge the next morning 😋

The best thing about pavlova is you make it how ever you wanna make it. Everyone has there own version, I hate blueberries so I go with blackberries, strawberries, kiwi and mandarin(very small). I also buy a whole heap of passionfruit and drizzle the insides all over the top. No, I'm not a Kiwi but I am a big lover of kiwi fruit.

Passionfruit pulp, kiwi fruit, mango and nice additions, first two do tone down the sweetness a bit. Heard lemon curd is another good addition. It's mostly about the presentation and colour.

I was fortunate enough to work at the Sydney Opera House and had the best New Year’s Eve on the boardroom balcony of the SOH, when it became year 2000. Fireworks, floating light boats shaped like fish and sea creatures. It was unforgettable.

You can buy a really small can of passion fruit pulp in the Supermarket and drizzle it over the fruit. I whip the cream myself but it is what it is so, honestly it all goes down the same way and as long as you liked it 🤷♀️ who cares. My grandchildren being grandchildren like a crumbled flake and peppermint crisp with passion fruit pulp as a topping. Marshmallow is an appropriate description.

You don't add jam. It's already loaded with sugar. The cream and the fruit cut through the sweetness. Generally you'd use whipped cream. Carols by Candlelight is the big thing here. Merry Christmas and a very Happy New Year to you both.

We used to use normal cream whip with icing sugar maybe some vanilla for taste to perks... Then U put dollops on the pavalova the cut strawberries or any fruit...you like but a must is Passionfruit fresh then some people put chaved chocolate... Never had icecream at all...could have more fresh fruit...on the side... U should of Google how to make it... And Christmas Cake and home made Pudding with brandy Butter and Custard...with brandy heated up...pudding and Custard... Goodluck making another Pavalova... In Coles U can buy little ones come in a packet of 6 I think and U can put Custard cream and fruit on them U would love them...😂❤😂❤

Whip normal cream with a little vanillin sugar, top with fruit - I use cut strawberries, cherries, blueberries, kiwi fruit. NO JAM. Love our pavlovas.

The base is commonly called a pavlova case (at least here in NSW). As others have pointed out, the case is traditionally filled with whipped cream (I prefer unsweetened cream because pavlova is sugar overload already). Banana slices are also common, as is tinned fruit salad (sometimes called fruit cocktal) - drained a bit first, strawberries are common, and the whole thing is often then drizzled with passionfruit pulp (either fresh or tinned). I've seen videos of Americans adding choc chips and other horrors. Please don't. Mango slices would be nice. Basically, the traditional pavvy is: meringue case, chilled whipped cream, summer fruits (bulked out with some tinned fruit), passionfruit drizzle. Followed by failure of your pancreas from all that sugar :)

I feel the important issue here is not what fruit you put on (though there should always be passionfruit imo) l think the only good pavs are homemade! I find the store bought tasteless, with too much marshmallow. P.s they’re actually super easy to make.

I'm sorry but that bought pav was abysmal 🤣 and nothing like a proper homemade pavlova meringue. Which would be a bit more like the meringue in Eaton mess. It has a crunchy meringue top with a lovely chewy caramelised marshmallowy interior. Some like it fluffier and some like it chewier! Covered in whipped cream with banana and passionfruit (classic) or raspberries and raspberry jelly and cream...the possibilities are endless!

The cream was a fail. Must be whipped. And lots of it. After you put on the fruit you need to add grated chocolate (or a broken up flake chocolate bar).

You did well. But honestly, don't be so fussy. Adding passionfruit with other fruit adds a bit of tartness or even blueberries. Any fruit "you" like. Just take the hints about the cream. I reserve custard for homemade trifle only, but each to their own 😉😋

That’s not the best pavlova to me. The best one is the one you make yourself with egg whites and sugar which is quite crispy on the outside and chewy in the middle. Much nicer. The cream & berries are fine though
