Chocolate came from Mexico in the 1500s. Chocolate wasn't sweetened or had milk added like candy bars. Europeans did that. It's a savory ingredient in some Mexican mole sauces. And before you ask, that's pronounced "molay" and is NOT made with moles! Mole goes well with beef, chicken and yes, cheese.

Though I was born and raised in America, Mexican food is a huge staple for me during my childhood. One thing I always hated was mole. I hated the chocolate in the sauce. Still to this day I hate it. My bro-in-law's mother made mole without the chocolate. That was the shit!

"Queso" is literally Spanish for "cheese". I'm a Texan, born and bred to eat Tex-Mex, and LOVING it all my life! I have too many favorites to mention, but my all-time best is "enchiladas". Nothing better in the world to me. Since I now live in the Philippines, this is making me quite homesick!

Mole, “molay” is Mexican and a mixture of various spices/sauces and can include chocolate. The sauce can include fruit, nuts, chili peppers, pepper, cinnamon or cumin.

An interesting fact about Mole sauce is that the sauce is arguably one of the most complex sauces out there, some will have around 20 ingredients in the sauce while others will have over 40. Some can have over 100... But those recipes are rarely used because it's a pain to make.

I live in a town of 2500 people in south central Texas … and we have FIVE Mexican restaurants! And they’re all always busy! I even have an abuelita that comes by my house every few days, selling fresh tamales out of her car… and they are the best!!! Just scratch out the veggies & fruit on the food pyramid and insert TexMex for us Texans. 😂

Our restaurants have more than one simple red sauce for the chips too. Hell my spot has 16 salsas to go with the quest and chips.

Mole' is a sauce made with about 20 different ingredients and two of them are cinnamon and a Mexican chocolate. It gives very subtle flavors and is an excellent sauce on meat and enchiladas. Questions, pronounced "K SO" 8s made with Mexican cheese and peppers. It is smooth and spicy and is the best dip in the world besides guacamole (avocado dip).

Oooh, but it is not the same as the real stuff at all. Honestly, there's a classic, Velveeta crock pot recipe that is super easy and a much closer aproximation than the tostitos stuff. Fondue or the cheese in Welsh rarebit has a similar texture, but the flavor of queso is different.

I'm a Texan and you need to have Tex Mex in the state. Do not let your need for queso drive you to buy jars at a store or gas station, choose your restaurant wisely so that you will be transported to cheese heaven. The whole southwest loves Texmex. It’s a fusion of Mexican and American with a dash of Texas and New Mexico. queso is Spanish for cheese, but it’s spicy good. Btw, chocolate is used in some Mexican dishes like Mole.

America is built by the small towns, and so many have really cool attractions, or even just restaurants that are worth taking a trip too! They are in Austin, TX at the El Dorado Cafe. Queso is a cheese based sauce. It is mildly spicy (depending on the restaurant it can be a bit more than mild.) It has various spices in it and it is amazing when done right. 🙂

The cheesy chocolate is actually a dish called molé... coming from a Mexican descent and born in Texas but now living in Florida ,,, Growing up my mom would make this all the time... It's usually made with chicken,,but the chocolate is actually a product called "abuelita" made by Nestle.. only able to find it in the Mexican stores at shops... But definitely a must try... It will knock your socks off.... Your palette won't be the same ..... Literally it'll make you want to move to the US....

Queso {KAY-SO} is just one of the dips. It's a melted cheese dip, with bits of sausage or beef, and (I think) it's the one they said has ghost pepper in. It can be made as mild or hot as one desires.

When people mention chocolate in Mexican food, they are usually referring to mole (mo-lay). It is a red sauce similar to red enchilada sauce but with the mellow flavor of chocolate. It's not sweet, it just flavors the sauce. Cinnamon is used in all kinds of foods. Not just desserts.

As a native Texan....The best Mexican food is in TEXAS, period! You can try some in Florida but it isn't Texas and can not compete with what you just saw. You need to come to Texas. The thing you called soup is called Charro Beans. Absolutely fantastic. Pinto Beans, with jalapenos usually and cooked with Beer. The chocolate your freaking out over is called Mole A cocoa type sauce that isn't like sweet chocolate.. It is a traditional Mexican sauce. It is amazing. Must try. The Queso is melted Mexican cheese mixed with Green Chilis. Absolutely amazing. I think they are eating at a restaurant in Austin Texas.

I want to say we probably have the best breakfast tacos in Texas in a consistent matter, it is normal here to get good quality gas station(stripes) breakfast taco, once you leave the RGV, the quality just goes down in any other gas station.

Adam you really need to taste some of the things that, when plated, looks like a mess. That or things that you think don't go together. Here in the States we have accepted, learned &/or modified dishes our immigrant populations brought with them. Chocolate is bitter until you add sugar, cinnamon can be used in savory dishes besides sweets, etc. One of my favorite jokes is that when Brits discovered spices they only sold them and never learned how to use them. In the U.S. we experiment with our cooking and have some amazing dishes. 😂

"Queso" is the Spanish word for cheese, but when you're talking specifically about dishes, it's a sauce type of thing. Some are spicy, some are not. If you do the tasting like they did, dip part of the chip in the sauce and eat that. Eat the rest of the chip dry before you try the next one. Cleanse the pallet

Don't know if you can get the ingredients over there, but you can make an okay (not traditional) queso dip with Velveta and a can of Rotel diced tomatoes w/green chiles. Add in some cooked crumbled breakfast sausage. Just combine in a slow cooker.

All tex/mex or mexican restaurants give you free chips and salsa shortly after sitting down. You can tell them you want queso instead of the regular salsa, but it normally costs extra. A good queso dip is hard to beat when it comes to any kind of dip with chips.

Tex-Mex is a combination of Mexican and Texan ways of cooking. Queso (kay-so) is melted cheese. It comes as white or yellow cheese. You can add jalapenos and/or ground beef to it also. Its considered liquid gold. The bowl of beans is called Charro (Char-Oh) Beans. Its a soup of pinto bean, onion, peppers, bacon, garlic, and various spices. Mole (Mo-Lay) is a chocolate sauce type thing put on various dishes (not a dessert). If you ever visit Houston go by either Ninfa's or El Tiempo Cantina. I'm surprised the folks eating didn't have some guacamole dip as well. Its considered green gold.

Loving the Mr. H and Friends (I always call it fam) on this channel. They do a lot of touring vids and British attempts at recreations lol. Pretty fun and I love the little daughter chiming in. Also the dark sauce you saw earlier was called a "mole" pronounced "mole-eh" and it's usually used with a chocolate ingredient (not as a sweetener since non sugar chocolates are preferred) and they are amazing.

Queso (Kay So) cheese. The dish that was black and covered in cheese was Refried Black beans (cooked black beans, mashed and fried) absolutely delicious! great in a tortilla as a sandwich(burrito) served as a dip with tortilla chips and salsa. Beans are a staple in Mexican meals. Authentic Mexican food, chicken, beef, pork is usually savory, mild the heat comes with the salsas. Mole (Mo lay) is a sauce made with cocoa and spices, delicious. Another treat is Napolitos (Na po lee toes) catus, spines removed, soaked in water until tender and fried with scrambled eggs.

When they’re describing “ cheesy/chocolate” what they’re talking about is Molé sauce. It’s a traditional Mexican sauce, incorporating dozens if not up to 100 different ingredients slowly introduced into a very ‘deeply flavored’ sauce. It does often include chocolate, but again can also incorporate 100 different other ingredients. It’s smoky, it’s rich, it has depth, it’s incredibly weird, yet equally incredibly delicious

I’m from Texas (South Texas along the Gulf Coast) and Question Queso (pronounced KaySo) is Spanish for “Cheese”. Queso Dipping Sauce(normally just called Queso) is melted cheese with a spicy tomato and jalapeño (pronounced hal a pain yo) puree mixed together. It’s creamy, cheesy and only a slight taste of spicy. Mexican chocolate has cinnamon added to it and is AMAZING as a hot chocolate drink!

Tex Mex Queso is a cheese dip, sometimes with roasted tomatoes, sometimes with Chorizo.

The liquid in the bowl is probably Birria. Those fried tacos look to be birria tacos and are meant to be dipped into that Birria sauce. It’s the most delicious thing you’ll ever put in your mouth when it’s made right. Mole sauce is made with chocolate, but it doesn’t taste anything like you think it would. It just adds a very richness to the food. Queso is different everywhere you go, but never pass it up. It is a warm delicious. Cheesy bowl of loveliness. looking forward to your October visit

200 years ago my ancestors moved to Mexico into the northern territory of Texas and became Mexican citizens. The foods they developed and ate there became a regional variant of the Mexican cuisine based on the availability of food ingredients - thus Tex-Mex. Likewise Clam Chowder and Crab Cakes are a New England variant of US cuisine, Beer Brats, Buckeyes, and Chicago Dogs are a Mid-West variant of US cuisine, and Pan Fried Chicken, Black Eyed Peas, and Cornbread are a Southern variant of US cuisine. 100 years ago my Great Grandfather owned and ran a Tex-Mex Cafe and Tamales were his best selling dish. I grew up in Texas eating Tamales (my dad's favorite food), Tacos, Fajitas, Brisket, Fried Chicken, Black Eyed Peas, and Cornbread, and my favorite dish that my mom made: Tamale Pie. Even though my DNA test came back as 70% British, when I travelled through England 20 years ago I knew nothing about such things as Meat Pies, Blood Pudding, and Bangers and Mash. My cultural heritage is Mexican - American (or Tex-Mex) - its who we are. We buy Cacao Powder (most people call it Cocoa) by the pound as a spice rather than as chocolate. And yes we do mix it with Sugar or Honey and Cinnamon to make "Mexican" Chocolate, and from that desserts and hot chocolate. And YES - Queso (or technically Chili Con Queso) is awesome!

Mole does have chocolate in it but the experience chefs use about 32 ingredients/spices to make the sauce. That from my experience living in Arizona (Silvana Esparza, The Barrio Café) and Chicago (famous Mexican chef, Rick Bayless - The Frontier Grill)

What the guy had that just sent him into space, he said it's Quesabirria (birria is a beef roast that's marinated before being slow roasted in a broth). You can then use the birria for all kinds of dishes. I know one of the things the lady said she had was the chicken mole (mo-LAY). Mole means "sauce". There's endless variations of mole, but It's a Mexican style cooked chili sauce, commonly made of tomatoes, chilies, and all kinds of spices, can include chocolate, and it's used all kinds of ways. If she tasted cinnamon, was probably made with Abuelita Mexican hot chocolate tablets. (Mexican style hot chocolate usually has cinnamon & chili powder in it) The only thing I can think of that would sound close to "cheesy chocolate" would be a cheese enchilada or cheese taco, and it could be just how the little girl said it in toddler-speak, lol

Queso is Mexican for cheese and queso dip is cheese with pepper and onion plus tomato and it can be hot or mild depending on the peppers you use. Mole sauce comes in 13 different varieties from the green to the dark chocolate sauce and is a complex combination of spices and peppers and herbs. It’s very hard to describe what mole taste like because it so complex

The bowl he was eating with the birria quesadilla was consumé it’s the broth the birria(beef) was cooked in. It’s meant for dipping tacos or in this case quesadilla in.

Mole sauce came about when a high ranking Bishop, or maybe a Pope, visited Mexico for the first time, They went to a parish, where the priest created a dish made of all the local ingredients. Mole, in this case, was made with Chocolate, and spices, probably with chicken also. Its a dark brown sause, sweet with many spices added. It was a huge hit, since chocolate was a rare thing in Europe. Mole was born.

Berria tacos you dip in the consume’ it’s a broth made from the juice the meat cooked in. You pick up the taco and dip it and take a bite

TEX-MEX MOLE 1 whole chicken 1/2 c. all-purpose flour Pepper Salt 1/4 c. chili powder 1 tbsp. peanut butter 1 clove garlic 1/2 tsp. cumin seeds 2 c. water Cut and clean chicken. Steam cook chicken, add salt and pepper to taste. While chicken is cooking, add flour and chili powder into a bowl. Mix well and add 2 cups water, stir until dissolved. Grind garlic and cumin seeds. When chicken is cooked, pour in flour and chili mix, cumin and garlic Stir well. Add peanut butter and stir. Gradually stir in a little more water to thin mixture a little. Simmer to a gravy consistency. Add salt and pepper to taste. Chili powder may be a little less or more depending on one's taste, and desired color of gravy.

Yes Adam, they use chocolate in the mole sauce....pronounce 'mole (as in the rodent) and ay (as in eight)' Mole is a complex sauce usually combining 30 or more ingredients. It is something you HAVE to try!

Tex-Mex is a style of cuisine of the American Southwest. It is available all over the country. Of course, you could get these ingredients and a Tex-Mex cookbook and try it all.

“Tex-Mex Texas Mexico” 😂 I’m so proud of you Adam. FYI, each boarder state has their own twist to “Mexican” food. I was born and raised in Northern CA moved to Texas almost 39 years ago…totally different tastes. New Mexico has a lovely flare also.

Cinnamon is used in mexican cooking, german and i use some in the spice rub i make for when i make spare ribs oh and on french toast, sorry in french toast.

Queso is basically spanish for cheese. But Queso Dip is just cheese and tomatoes with green or red chili peppers, and depending on the person it can have either sausage or ground beef included. Queso Dip is often called Rotel Cheese Dip and it's just the same thing with a different name. I personally use Velveeta Cheese, Rotel (tomatoes w/green chilis), Cream Cheese, Sweet Corn, and Jimmy Dean ground breakfast sausage in mine. Also, if you are going to the US...I highly recommend you try authentic Biscuits and Gravy...those will change your life.

"Bira Tacos" You can get in lots of states, it comes with the juice in a side cup, which is the meat juices and some times extra spices to dip tacos in. yellow Queso is Fire on pizza! Cheers

Tex-Mex are the foods that developed along the boarder and in both places. It is what many think of as Mexican food, but really is Northern Mexican/South Western US food. Mexico has a wide variety of cuisine like any country, depending on location.

It's unsweetened chocolate. Been used for about a 1000 years in that part of the world as a savory ingredient. By itself you probably wouldn't want to eat unsweetened chocolate, but it's in a base of many other ingredients and tastes amazing.

Queso is melted cheese ( nacho cheese or Velveeta cheese) and salsa mixed together. I add cream cheese and hamburger meat to mine. The "soup" are charro beans. It's amazing if they are cooked right.

It's the seeds in the peppers that make them so hot. Just remove the seeds if you are looking with them. I recommend you do it under cold running water

Chicken Molé enchiladas. The Molé sauce has chocolate and peanut butter, topped with cheese. It's really an amazing dish.
