I put raisins in my menudo. Liver instead of pork or beef liver spread is what I use for menudo. I dont put hotdog in my menudo. I use soy sauce, and annatto instead of tomato sauce. For seasoning salt and black pepper. The afritada may have soy sauce but no liver. It can also be chicken afritada. Kaldereta is beef or goat and it does not have peanut. Kare-kare is the one with peanuts.

My mother used to cook a mean Menudo when we were young, though it's mostly on special occasions that she cooks it. And she adds raisins to her Menudo! And Mike, you mixed up Kaldereta with Kare-kare. It's Kare-kare that has peanuts.:)

No worries, there are caldereta recipes from the Southern Tagalog towns (Caivte, Laguna, Batangas) that traditionally use peanut butter + liver spread to their caldereta :)

Afritada from the Spanish word "Frita" means fried, you need to fry/sear your meats first before turning it into stew. Menudo means "bits" so it's smaller Mechado means "to put a wick" where you stuff a lean piece of meat with a piece of backfat like a wick of a candle. Callos is like menudo, but it uses tripe and pieces of oxtail ,it also has olives and garbanzo beans.

I would love it with freshly baked bread especially sourdough, Rye pumpernickel or whole grain bread to get the bits and sauce in it. Love it to go with a nice salad. Yummy 😋

Good job, Mike! Looks tasty! The potatoes are sufficient carbs for the dish. For people like us who do not work in the fields, construction, … anything that doesn’t require constant, manual labor- rice turns into sugar. It seems a lot of Filipinos aren’t aware of that
