Ingredients:
225 g/8 oz self-raising flour
75 g/2½ oz caster sugar
1 tsp baking powder
125 g/4½ oz unsalted butter, cut into cubes
150 g/5½ oz dried fruit
1 egg
1 tbsp milk/milk alternative (I used soya milk for this batch)
2 tsp vanilla extract
Method:
1. Preheat the oven to 180C/160C Fan/Gas 4 and grease or line a baking tray with baking parchment
2. Sift together the flour, sugar and baking powder in a bowl and rub in the cubed butter until the mixture looks like breadcrumbs, then mix in the dried fruit.
3. In a clean bowl, beat the egg, milk and vanilla extract together well.
4. Add the egg mixture to the dry ingredients and fold together with a spoon or spatula until the mixture comes together as a thick, lumpy dough.
NOTE: if the mixture is dry you can add a teaspoon more milk if you need to make the mixture stick together. Be careful not to add too much liquid.
5. Place golf ball-sized balls of the mixture onto the prepared baking tray. Leave a space between them as they will flatten, spread out and double in size during baking.
6. Bake for 15 - 20 minutes, until golden-brown. Allow to cool for a couple of minutes before transferring them onto a wire rack to cool further.
