@phobiaone - What people that like to lay claim to New Orleans food will stop doing is giving credit to Cajun/ Creole people, when saying Creole food is another way of crediting French/ Cajuns with food that is not theirs and the continuing erasing of the enslaved Africans. New Orleans food is the food of the African enslaved people or considered Soul Food today but, you will not find any of these dishes being served in the Native American or french cultures. As for as Caribbean cultures, central and South American and even in South Carolina where the Gullah Ghee people live, they serve the same foods by similar names that is the culture of the enslaved people including BBQ. The only reason why people can lay claims to African Americans food is because, we never had or was given any money to make money off of our intellectual property or culture and our culture becomes American culture and currency for anyone that wants to claim it. I'm from Mississippi about 3 hours north of New Orleans. I'm 60 now, but when I was young, my Mom would cook ham, black-eyed peas, butter beans and cornbread for supper. Sometimes we would have turnip greens and home made pepper sauce too for supper with the rest of it. We lived in Jackson, MS but half of our yard was a Garden that we worked in all the time. Then in the morning, Mom would warm up the left over cornbread in the oven, she would split it open and smother it in butter. Then we would pour some strong backstrap molasses over it for Breakfast with milk to wash it down. It was the BEST. I still love that sometimes for desert instead of breakfast. Another way to enjoy cornbread is to make it a little sweet like my Mom's, butter it, then pour black-eyed peas and juice over it.

The red beans and gumbo are both made with a rue base, which is part of what gives them their rich flavor

Gumbo yes, but typically don't put roux in our red beans. We mash some of the beans in the pot to make it thicker, and use some type of meat like a hamhock or turkey neck to give it its meaty flavor.

I have seen and had it made with a roux though, turkey neck in gumbo I'm familiar with, not so much with red beans.@@JLDReactions

So glad you've enjoyed the food in one of the cuisine capitols of America. Now, it's time for Texas BBQ. Not that grilling that people do in their backyards. BBQ in Texas means Terry Black's BBQ restaurant. Another truly life changing experience.

You watched the JOLLY video and they put the hot sauce on the jambalaya and that ruined it, lol. You just confirmed what Josh and Ollie said as well about the shrimp...you've been missing out. Too bad you didn't get to try the fried catfish. That's also some GOOOD eatin'! You need to make cornbread. It's another easy thing to make. There are two camps you'll find people in who love it, sweet and not sweet, lol. I don't mind either but I'd rather have sweet. I discovered a honey cornbread recipe that's fabulous and to cut through the sweet, I add black pepper....sooo yummy!!

@Jeff_Lichtman10 ай бұрын
Louis Armstrong, who was from New Orleans, would sign off his letters with "Red beans and ricely yours." There are as many recipes for gumbo as there are cooks. I didn't see any okra in it, so I suspect it was a filé gumbo (which uses powdered sassafras leaf instead of okra as a flavoring and thickener). Li'l Dizzy's has good po' boys. Maybe you could try one or more of those when you go back.

New Orleans is the BEST eating city in America, followed by New York, San Francisco, Los Angeles, and Chicago, in that order. After that it's Canada, with Vancouver, followed by Toronto - Then Huston, Mexico City, Seattle, Santa Fe, and finally Miami. America, like Britain, used to be mediocre for food. But now America, like Britain, has some of the Best food in the World.

I grew up around New Orleans! It's fascinating to see people experiencing the food I grew up with for the first time! One thing to note : next time I recommend dipping the cornbread in the red beans and rice, or even crumbling it up and mixing it together (like one would crumble crackers into soup). It makes them less soupy, and the cornbread absorbs the juices without getting too soggy, adding a nice thick texture to the dish. As for where we get all those flavors for the gumbo, New Orleans is one of the oldest "melting pots" in the U.S. It's a mix of many cultures, especially when it comes to the food and spices. Great video! I'm hungry now.

Thank you for coming down to Louisiana and trying our food. So many places advertise themselves as "Louisiana" or "Cajun", but nothing compares to the real thing. As a native south Louisianian it makes my heart happy seeing you two experience this kind of food for the first time :-)

@marlies744410 ай бұрын
Great video. Watching you both light up and enjoying the "spices" makes me chuckle a bit. In my head I was saying get some hot sauce when you first tried the chicken, and was elated that you did. A vinegar heavy hot sauce like the one you had is fantastic for greasy foods. Kind of in the UK adding malt vinegar to fish and chips. I also ad that kind of hot sauce to fried fish. The Crystal brand as well as Louisiana and Texas Pete are great. For wings the Frank's Red Hot is usually used. But I think all the above mention are good. For Mexican dishes I like Cholula and Tapatio. Even the red beans and rice seem to be flavor bombs. Which makes me wonder what the English beans taste like, and if you are able to go back to eating them after having eaten beans in the US. Not sure if you had Mexican refried or pinto beans. And in the south we also have navy beans (or white beans). BBQ baked beans tend to be sweet. Looking forward to your next adventure.
