In our latest gastronomic adventure, we found ourselves with an abundant piece of pork belly, and what better way to utilize this succulent cut than by transforming it into homemade bacon? AliExpress sells child size rubber gloves. 50 gloves for 95p and free shipping. Alena could use them when helping you and when doing artwork. To make American bacon you'll need some "Pink Salt". Not Himalayan but pink curing salt. Theres a formula you can find that tells you how much to add. I did some cold smoked orange flavored bacon. Came out awesome. Smoked it with applewood.

now is the time to have a classic *_"BLT Sandwich"._* Bacon Lettuce Tomato use a good quality, chewy bread that is toasted to your pleasure. avoid iceberg lettuce. use a boston, butter leaf, or some other good quality lettuce. a nice fat slab of beefsteak tomato completes the sandwich. avoid roma, and other similar "plastic tomatoes". then dress the sandwich with mayo, and a couple grinds of pepper.

@@Charlee1776No,They have Heinz. They can doctor it up and make baked beans. Some brown sugar,cinnamon,onions,green peppers and they’ve got baked beans once they put them in the oven.

But in the summer. Only perfectly ripe tomatoes are good enough for that bacon. (Though I’d go with a good crusty whole wheat toast.. . . )

You might want to think about getting that awesome (not cheap) smoker secured to the wall or slab with a chain, somebody is going to see that on your vids and want to grab it. Signed, paranoid Texan that has had too many things go missing from the yard. P.S. Also my Cajun grandmother would whip me with a willow branch If I threw out bacon drippings, that is pure kitchen gold! Save it in the fridge and put a spoon in a pot of green beans with onions, make real cream gravy, fry your eggs in it, the sky is the limit. Thank you for sharing your adventures with us, Cheers!

This is truly exceptional. To be honest and fair, outside of some farms, butchers, and some hunters, hardly anyone here processes and cures their own bacon. Many of us could take a few lessons from Mrs. H. Edit: you can add bacon to your own homemade pizza. A meat lovers style pizza is fantastic with bacon, or even a supreme pizza with mushrooms, onions, olives, and peppers. You can also chop it up (rough chop or fine chop) and put it to top off a salad, in a baked potato, or in a homemade mac & cheese.

1/2 inch cubes for use in split pea soup. Dice it up small, fry it until crisp and put it on salad as a bacon crumble. Small pieces in a pan with sliced yellow/white onions and slow cook for caramelized onions. Try cooking the bacon strips in a pan, on medium low with a small amount of water. The water will allow the fat to render while not over cooking the meat. AND, always save the bacon fat as it can be stored in the fridge and used to cook in rather than oil/butter

There is a company called Grill Your Ass Off that has some very good rubs and seasonings. Its Veteran owned and they really take their time in perfecting a really good spice or rub that complements anything for grilling or smoking.

Well, my grandmother is 95 & 1/4 years old. and it was bacon, fried chicken, or pork chops for virtually every meal she cooked (and she cooked them all from 17-87? 88 maybe?) She saved her bacon grease to make biscuits and (bacon grease)gravy once a month she might do a meatloaf, but everything else she ate (aside from eating out - generally after Church) each week, or eating at my mom's or uncles for birthdays, mother's or father's day's etc.. and holidays it was mainly those meats... pork chops, bacon, fried chicken, occasionally chicken & dumplings. So... how unhealthy can it really be? But in the mid to late summers we had a LOT of "garden meals" the meat? ALWAYS either bacon (75% of the time) or Pork chops (25% of the time) then there were green fried (in bacon grease) tomatoes, mashed, creamed (so boiled then finished in butter and milk with a little flour to thicken) or fried potatoes - if mashed butter, if fried - bacon grease, cooked cabbage, green beans again - IN BACON GREASE sometimes we'd have corn on the cob, other times it was just cooked on the stovetop after being cut OFF the cob in some water and butter, sometimes milk & butter. She'd usually do cucumbers and onion in vinegar. IF there were only green tomatoes, no red yet it was just the green fried, if there were also red, she'd peel and slice a bout 3 tomatoes and we'd take a slice, salt & pepper it and eat w/ the meal... but I THINK was everything , but MOST of it was bacon or w/ bacon grease... just sayin'. 95 - 1/4 years old... Oh, She also had a BLT or club sandwich for lunch more than a little bit... but usually it was bacon, or fried pork chops, mashed potatoes (summer, spring, fall or winter) but sometimes fried, sliced tomato, green beans (w/bacon grease to season along w/ salt & pepper) sometimes w/ cooked cabbage - but that got bacon grease too w/ salt & pepper that or one of the sandwiches was usually 'lunch' for her, my uncle, me and papa most days (he, and usually, my uncle when he was working w/ papa or still at home) at daily for lunch.

Sugar and honey have been used as a preservative and antiseptic since prehistory. Salt, pepper, and smoke are also classic preservatives. And fyi, by popular consensus, you cannot cut American bacon too thick. Have you thought of trying a club sandwich? You'd need some good turkey. Something to try smoking, perhaps. If you smoke some bacon with the same recipe, I would use nut or fruit wood, if you have the choice. And I would definitely spritz it down with an apple cider vinegar wash to balance the sweet with sour, since you're adding depth with smoke. Plus it keeps the bark from becoming a rind, which happens more easily with preserved meats. My two cents. Looks good!

You might consider getting a “Meat Slicer” They are not overly expensive and since the two of you have “Gone All In” When it comes to American BBQ getting a Meat Slicer would be a great addition to your kitchen appliances. Smoked Turkey Smoked Bacon Smoked Brisket Over Roasted Chicken Oven Roasted Turkey Corn Beef Pastrami And Countless more meats (And Yes,,,,,Cheese) Having a Slicer would allow you to make Sandwiches so much easier and faster. As well as just “Portioning Out” Hunks of meat for Freezing or refrigerating for later use. Imagine how much quicker slicing up 4+ pounds of Bacon would be with a meat slicer (Plus, the thinness or thickness would be consistent Every Time).

Put that bacon in beans w/ 2 tablespoons ketchup and a teaspoon yellow mustard per can. lay the bacon across the top and cook an hour on 300f. You can put in chopped onions also.

A good southern comfort food is Beans and Cornbread. You can through a bit of the bacon in to a pot of beans (pinto, navy, or large butter beans) I always crumble my cornbread into the beans and add a bit of hot sauce to taste.

You need to make BLT's with that bacon. It's a simple classic sandwich with a liberal amount of Bacon with Lettuce and tomato, usually with mayonnaise. put it all on your favorite bread and enjoy. Kaiser rolls, Portuguese rolls, Itallian hero bread or other similar rolls or loafs and sliced white bread toasted or not toasted all work well

Great job!. As others have said...you must try the classic BLT. Toasted white bread, sliced tomato, iceburg lettuce, crispy bacon, mayonnaise. Make the bacon the star. Not a Michelin star dish...but certainly an American classic.

American style "streaky" bacon will continue to crisp up after you remove it from the pan, so if you like just a little crispy, take it out a bit early. You can also bake it in the oven on a flat pan for even cooking. (325-375F) And a meat slicer can help get uniform thickness of the slices.

It takes a lot of prep time, but cooking bacon sous vide for half a day to a day before frying it up or smoking it can get you bacon that comes apart like butter.

Wrap bundles of asparagus to toss on the smoker next time you're putting together a big chunk of meat to smoke. Great side dish, and it certainly still counts as a vegetable dish.

You don't have to use curing salt just plenty of regular salt is fine. Also you could do what's called cold smoking the pork belly after it's done curing. Temp around 110 degrees Fahrenheit for like 10 to 12 hrs then you can cook it any way you like it. Bacon in the oven is the easiest way to cook it and not burn or make a big mess. Also if you line your pan with foil it's easier to gather up the grease and save it for cooking eggs in.

Tennessee here, and I'm from a barbecue family, so I just have to ask. What kind of wood did you use in your smoker? If I watch your smoker episode, am I going to get angry? I don't want to because I really like your videos, and I love when you try out doing American things for yourself. But I'm guessing it's like watching Americans try to play Cricket. There's someone screaming, "Why are you swinging the bat at shoulder level!?!?!?" I'm not sure what else you can do with the actual bacon, but if you pour the bacon grease into a jar and keep it in the fridge, you can use it to coat your skillet to make pancakes, scrambles eggs, cooking up some chopped potatoes, etc. It just adds more flavor than cooking oil does.

Besides flavor, the recipe uses sugar in the brine to make it fry up crispier. Your bacon looks really good! Heck - just find some fresh garden tomatoes and make BLT's. One of the best uses of bacon.

BLT sandwiches, save the bacon grease and use it to season green beans and cut up some tiny pieces of bacon and onion to go in the green bean dish as well. Green onion, bacon pieces, shredded cheddar, and a dollop of sour cream on sliced open long-ways "jacket potatoes" so YUMMY! Classic bacon and eggs for breakfast (with the eggs cooked in the bacon grease), We like "thick cut" bacon as well. BLTs are best on loaf bread not crusty thick bread. Great job on making your own "streaky bacon"! Great vid! Oh... BTW, Mom... if you put the container between you and Little H, she wouldn't have to reach so far. (*cheesy grin* Never mind that she would probably knock it off the table edge. LOL)

If you guys do decide to smoke the next one, see if you can get some cherry wood chips or apple wood chips. Peach wood is really good to smoke with too, but I'm not sure how easy it is to acquire there. Your neighbors are going to be hungry and jealous!😂 Good luck & happy smoking!

Just remember. mom (the look) KZbin is forever.... Alana might check some of these out some day... (Just sayin' ;) I vote yes for smoker bacon. Do some BLT's! (it's even a BRITISH dish! Just one you seem to have dropped, but those Brits 'left' in the USA picked right up & spread the delight to the other Americans who didn't know about them!) So very popular here in the USA (in fact had one for lunch!) Don't forget the mayo, and lightly toast the bread! Then a tomato slice or 3, some lettuce, a bit of pepper & salt and voila! ETA: I think you should fry up some bacon, then make biscuits and gravy (the gravy you make w/ the bacon grease and flour, salt & pepper w/ milk) the bacon is mainly to eat w/ the biscuits and gravy - and to get the grease to MAKE gravy ;) Ken Click has a good recipe he calls bacon gravy pepper gravy... but it's one in the same. (also he's doing it in 2 separate, but identical mini appliances...so you'd need to expand on the recipe a bit and just do biscuits as he says, just do not make as soupy as he did, and make drop biscuits to make it easy.

I mean, best thing to do with bacon is to enjoy it lol. Scramble up some eggs, throw some shredded cheddar on it, splash some hotsauce(or smother it) and have some bacon and eggs.

You really need to make BLT's!! (Bacon, Lettuce & Tomato Sandwich!!) You toast the bread, add mayo and then bacon, lettuce and tomato!! So good! You know us Americans - we love anything wrapped in bacon -- hot dog wrapped in bacon and grilled, I LOVE scallops wrapped in bacon, of course a breakfast sandwich with bacon, egg and cheese on an english muffin or crescent or even a bun!

Arizona Here!!!!! Hello Ya'll, you should try making Armadillo Eggs with some bacon. They start with cream cheese filled Jalapeños and cover it like a Scotch Egg with minced pork sausage and then wrap it with the bacon until the bacon covers the egg shaped ball of meat. Next you smoke them on the smoker and once it has smoked for a couple of hours, brush some barbecue sauce on it. Place them back in the smoker to caramelize and enjoy😁😋😋😋😋

Louisiana here, well I'm from Florida originally, landed here by the Army, you guys are awesome, my downfall are BLTs. Meatball stew, hamburgers in a brown mushroom gravy with cooked onions, fried and boiled shrimp, ahhhh, great food, good friends, giving thanks to Jesus, can't beat it.

This is the best type of bacon for a BLT, thick cut lean bacon. The only way to improve it would be to smoke it.

Somebody needs to contact the Food Network, this is getting a little too professional for KZbin. What better than a British family traveling the US to learn more comfort food cooking and bring it back to the UK and shares the love. I think Cooking with H and Smoking with H would be a hit in America. Mrs. H, if you're going to cure bacon for nine day (great job), then you need a meat grinder and start making boudin links and fried Boudin balls. So Food Network, they are The H Family and they are ready to cook for your network! Boom!!!

Hey Food Network, what about "Cooking with H, Brits finding Recipes in America". Traveling and cooking show. Barbecuing in Texas, making pizza pies in New York, ice fishing in Alaska, Mr. H could learn how to Kalua a hog in Hawaii, learn how to cook shrimp n grits from the best in Savannah Georgia, and more best dishes from every state in the US. I think this is a winning idea.

I think maybe in 6 months time. ATM they are “Just Learning the Ropes” But in 6 Months Time they will have developed some real skill and they will be able to better explain what and why certain things are being done the way they are. From the Curing process to the Smoking process to the Marinating. They are already comfortable in front of the camera, but being able to answer the host’s questions with confidence will be easier with a bit more experience. But I do love the idea.

That bacon grease is perfect for making gravy to put on top of biscuits. That bacon grease will make your gravy flavor be outstanding. I always save my bacon grease.
