Tip 1) for getting the skin's off, especially when freezing them - if you cut the raw beans in half before blanching them you will find that a lot of the skin's will just float off as they blanch and then a bit of a shake in the colander as you drain them and a large number of the beans will drop out and to the bottom :-)Tip 2) Microwave the beans with a couple of tablespoons of water - much quicker than steaming or boiling and less nutrients lost. :-)
@WhatVivididnext7 жыл бұрын
I may try tip 1.....but not tip 2 as I don't have a microwave. Cheers. :-)

Hi Vivi. Tonight I had my first harvest from my first-ever crop of broad beans and I decided to make your dip. It was Yummy! I put out 3 separate bowls; one of the basic dip, one with tahini added as you suggested and one with cumin. We decided we liked them all! Thanks for the inspiration :-)

Hi vivi. Loving you dip. I've always eaten beans whole not shucked like you do. If you want to speed up cooling add a little salt to ice water. (Good if your having party to do salted ice water bring temp down quicker and colder) My beans are weeks off my fault. Forgot to plant start plant I grow with everything else going on. On another note from your previous vids when you mentioned friends asking favs for flat/ pet sitting. Do it as a way of adding to your income like your sewing. Do it at a lesser rate than what others would charge so your still being a mate if you feel more comfortable with it. Also if it works in your daily routine. Just a thought as they all know you have no full time income for the next 12 months. It might be something you could develop also consider dog walking. Have your steps each day pay you too ! Hope you don't mind my suggestions. Nicola

Hey Leigh, we really enjoyed the broad beans and yes, I think they are similar to a very young butter bean but even large they do not have the dry texture of a fully mature butter bean. I hope this helps.

I found a recipe for a similar Middle Eastern dish (whose name I’ve forgotten) made with dried fava beans that are soaked overnight, then peeled, and then cooked for a very few minutes. Mix in the spices and oil, lemon juice to your taste and mash all together. Top with some diced red onion. You can then have your dip in the winter. Not quite the same as using fresh, but still Delish!! Cheers,

LOL I bet you didn't even get to the part where you made the toast for those beans. LOL I'm surprised that you could wait for the video to end, I sure couldn't. Don't you just love it when something as fresh, and new as a first harvest gets to the kitchen? To me it's so exciting that I simply can't wait. Shoot, I start nibbling before things are even cooked. As old as I am, it still gets me as excited as a 6 year old. It's great to see someone that enjoys a new harvest as much as I do. Oh, and no, I have never had broad beans before, but I sure can get that way with peas and any other bean that's fresh from the garden. Really fun video. Bless, Sheila PS and nothing can make it even better than GARLIC, lots and lots of GARLIC!!!mmmmmmm

Hahahahahaha - no, I didn't get as far as making toast........and what you didn't see was that as I was skinning them I was scoffing half of them.........the ingredients shrank quite a bit before the final shot. Hi Vivi. I grow Long Green Masterpeice Broad beans which have a much more tender skin. I don't bother skinning the bean and often add fresh coriander and/or mint, sometimes tahini and cumin. All taste divine. Unfortunately, my beans aren't ready yet, so I'll have to wait a while yet.

To me a raw broad bean tastes just like a pea. It has that nutty taste, and a bonus is the beans are much bigger :). Late comment Viv BUT your enthusiasm for broad beans (and Hugh F.W.'s from River Cottage) left me longing to try them and they have them at our farmer's market today!!!! We are blessed with a weekly downtown farmer's market that brings fresh food to the city core and we have a large Italian population which is who the farmer grows them for. Sooooo, I bought about a pound of them, they are the larger/older ones that will need to be skinned but I am so excited to try them. I may even try and start a late crop of them if I like them! They had better be good. ;-) Janet in Winnipeg, Manitoba, Canada

Oooh, enjoy.......they are a great garden snack straight off the plant when they're young and tender.........I find it hard to get any home! Big tip.....once they get large and fat you need to double skin them......ie: pod them as normal and then when you prep for eating steam them for five mins or so and then pop them out of their 'skins'........the skins are quite tough and bitter the larger the beans are. I'm salivating at the thought of my first ones in a couple of months!
