Broccoli Cheddar Soup | Easy & Delicious SOUP RECIPE

• Broccoli Cheddar Soup ...
BROCCOLI CHEDDAR SOUP
1 onion, chopped
4 cups broccoli florets, chopped plus 1 cup broccoli florets, chopped
3 cups chicken broth
1/4 tsp granulated garlic
1 tsp fresh thyme (or 1/2 tsp dried)
2 bay leaves
4 tbsp butter
4 tbsp all-purpose flour
1/2 tsp salt
1/4 tsp freshly ground black pepper
2 cups milk
2 cups sharp cheddar cheese, shredded, plus more for garnish
garnish with a slice of crusty garlic bread
1. To a large pot add onions, 4 cups chopped broccoli florets, chicken broth, granulated garlic, thyme and bay leaves. Combine and bring to a boil. Reduce heat to simmer, cover and simmer 10 minutes, or until vegetables are soft. Remove from heat to cool.
2. While broccoli mixture is cooling, steam the remaining chopped broccoli florets until they achieve a tender-crisp texture, 5 to 7 minutes. Remove from steam and run under cold water. Set aside.
3. Once cooled, remove bay leaves and pour mixture into a high-powered blender. Blend until smooth, about 1 minute.
4. Place the original pot over medium-low heat and melt butter. Whisk in flour, salt and pepper until a white roux forms. Stir in milk. Continuously stir until mixture thickens. Add cheddar and stir until cheese melts. Pour in broccoli mixture, stir and cook until blended and heated through. If needed, add more chicken broth to thin. Taste, if needed season with additional salt and pepper. Add steamed broccoli and combine. Serve with crispy garlic bread.
This stove top soup recipe is warming and full of comfort. It is one of my favorite soups to cook when the weather is colder than normal because snuggling up with a warm blanket and warm bowl of soup...let's just mention it is a guilty pleasure.

Looks great--love broccoli! Going to try this with some plant-based milk and cheese as I have a family history of Cancer so need to avoid the estrogen and possible BLV in dairy. Thanks for sharing
