Great budget meals Vicky, especially that smoked mackerel risotto. That bacon would be great with beans n sausages. 1 or 2 cans baked beans, however much sliced smoked sausage or hot dog sausage and that cooked crispy bacon, cook it altogether in one saucepan and serve with either toast for lunch of mashed potatoes for tea (great meal for the camper van). Can't wait for the next episode, thanks for sharing x

Well you hit the nail on the head with those delish meals Victoria. People are feeling the pinch. Veg Frittata is what I made today in my frying pan using up 3 Rashers and all the veg I had in the fridge. Ideal with salad and brown soda bread. Jx

The water comes out from not have enough space for the meat to crisp up, from over crowding the pan. The fat you cut off would have added more flavor. You can always drain the bacon after it is crisp. If you add it to your baked beans with some diced green bell pepper, onion that has been sautéed in the drippings then add in the cooked bacon along with some brown sugar, dab of mustard, ketchup and Worcestershire sauce will yield a delicious product to be served along chicken, fish, pork or beef. If you use a baking potato, like a russet ( couldn’t tell if that is what you used from lighting), the best way to get that wonderful crisp texture on outside and fluffy inside is to gently poke the potatoes with the point of a knife, all over, then rub the potatoes with some oil all over…then sprinkle with some salt. Bake in a preheated 400 degree oven for around an hour. Same amount of time needed to bake your baked beans. Put a small pork roast( that has been seasoned and browned) in a slow cooker with a cubed onion, a 12 oz can of soda ( preferably coke or root beer), and a bottle of barbecue sauce. Cook on low for 4-6 hrs. You want it to fall apart. Pull the meat apart, then add some more of your favorite barbecue sauce and serve on hamburger buns. Most or all lot of Americans like a coleslaw on the sandwich. Also, you can make the twice baked potatoes up before baking and place on a cookie sheet and freeze individually for when you want/ need one and there isn’t time to make them. If you want to stretch your potatoes even further make the twice baked filling and place in a freezer/ oven proof baking disk and dollop with some pats of butter. Cover tightly with foil and freeze. Pull out night before and defrost in fridge then bake in 350 degree oven until hot and slightly browned. You can always sprinkle with some cheese on top if you want. Take the potato skins and cut into thirds and freeze individually. Place in a freezer bag for when you have enough to make potato skins topped with cheddar cheese, green onions and crispy cooked bacon. Serve with sour cream for those that like it. Just some extra ways to stretch your products…plus, baked beans or any cooked beans can be frozen and brought out when needed. Hope this helps someone.

Will definitely do mackerel risotto. One cheap meal which is one of our favourites, it's vegan from happy pear Christmas Wellington. Ingredients puff pastry,filling cous cous grated carrots, parsnips, onion and nuts condiments soy sauce veg stock herbs thyme and sage,looking up on you tube, will serve 5. Another great vlog.

A variation on the stuffed spuds is like a gratin - layer raw spud slices, bacon and onion like a lasagne and then cover with a cheese sauce - cook covered for around an hour at 200 degrees - soooo good -?im going to look into they bacon 👍

Good job. A tip, after removing the potatoes from the microwave oven either place a bowl upside down making sure potatoes are completely under the bowl. This will finish cooking the potatoes. Oh,could you cook the bacon in the air fryer? You can tell you put a great deal of thought and time producing the video. You go Girl 🤩👍🏻😉

Just made the risotto tonight (eating it as we speak), very good but a bit salty for me with salted mackerel şalted butter and cheese and salty stock so I would recommend low salt stock cubes,still delicious and tons of it!

Glad you enjoyed it! I should have clarified to use unsalted butter 🙊 but I agree it definitely down need any additional seasoning. You could always use half the amount of stock cube to water to dilute it a little xx

The risotto sounds lovely, mackeral isn't something I usually eat but think I will give this a go. Aldi does a packet of grated hard cheese for 99p. There's lots of nice mackeral recipes on the John West website Victoria.🙂

For anyone trying to stick to a budget at the moment I would recommend trying out some meat free recipes. Anything made with lentils or beans as your main protein source is so cheap! Definitely have a search on Pinterest if you're struggling for veggie ideas x
