I own a gourmet popcorn shop and this is exactly how we make it. Except we use a cooker/caramelizer that brings the temp up to hard candy crack stage. No oven needed.

Finally!! A broken down explanation of what happens when you coat popcorn and why you need to be quick and diligent. Everything was easy to understand and honestly game changing as I am starting Pippity Poppity, my own popcorn business in a few weeks and had trouble understanding why my coatings made my popcorn sticky and whatnot. Thank you truly!

1:36 You've got a bit too much oil in the pot you don't need that much and it makes the popcorn greasy. I love the concept but it's too much work. Boiling sugar to 250* takes forever and then desiccating in 250* oven is silly for the volume. This is a very edge case novelty, especially considering the cleanup
@JamEngulfer5 жыл бұрын
I might adapt this for normal caramelised popcorn. I tried improvising the add liquid then dry in the oven method, but I did it very badly and it just de-puffed all of the popcorn.
@FlavorLab5 жыл бұрын
You want it to be sticky and less wet. If the sauce is too wet it will just make the popcorn soggy. Is that what happened?

How do I make a cheesy caramel sauce? Also is the oven part necessary? I saw a video from the Garrett shop and they just keep tossing it till it cools.
@localppc242 Жыл бұрын
That’s because you have to heat the mixture till it gets to 285 or 300 degrees. Hard crack stage
@Una_Vida3 жыл бұрын
I have to agree with the other commenters. Pouring hot liquid over popcorn never works out well. Personally, I use room temperature buffalo sauce & olive oil instead of butter. Also, much of the lid condensation can be reduced by leaving a vent for the steam to escape or using a screen.
@ClockworkAvatar5 жыл бұрын
that's way too much oil, and use a splatter screen instead of a lid.

So instead of pouring the sauce over the popcorn lined on the baking sheet and stirring it.. do you think that pouring the sauce over the popcorn into the same pot you popped them in and then shaking it up well would be a good method of coating? And then pouring the popcorn out onto the baking sheet to go into the oven? I get kinda intimidated of accidentally breaking the popcorns by stirring it too much.
@FlavorLab3 жыл бұрын
Yes that will work as long as you are sure to remove all the kernels

why do pop corn pops? 🤔😷
@bellenesatan4 жыл бұрын
Hey there! I'm upset no one has answered you yet, but I'm here! It's actually quite simple. When the hot oil touches the kernels at the right temperature, the water residue inside the not fully dried kernels starts to rapidly expand and boil, cooking the starch of the corn and breaking the outer shell, expanding and pulling the starch with it. Basically when it gets really hot, it breaks and turns inside out to be crispy

At this point you can throw away all the rest of those ingredients you're never gonna use again 🤡🤡🤡💀💀💀
