+pineapplepie52 I know how you feel. Working for a franchise owner is very soul breaking. I think its probably not even the right kind of knife. Anyway I'm not surprised. The horrible thing about these chain franchise places is that people that have no right to even be in a kitchen buy these stores and buy the position of manager and trainer and just follow a handbook that came with the franchise but outside that book usually have no knowledge or passion for the work and run it as cheap and ghetto as possible. If you look closely the tip of the knife is broken off and it is poorly sharpened and breaks through the cake as apposed to cutting. I have quit places before because of these people that buy their management and run unsafe conditions. Fortunately this place burned down one night and it was probably from their own neglect.

Yes I have since had more passionate and creative artistic jobs that made me happy like screen printing, working for a band on tour and in studio, and working at this beautiful music store in Chinatown LA, And then working at a booth for a guitar company at the biggest music convention.It took some tough decisions, leaps of faith, and luck.They were not sustainable incomes for me, I would do it all over again but at some pointI think I need to settle into a long term sustainable income career. Late college entry and grad perhaps. who knows. Chase your dreams and passions. Its not easy but man it is an adventure. :)

I would hold the cup in one hand and scoop the ice cream in with the spade in the other hand. Now and then I'd try to toss it in too. I wish I had done some of the tricks in this video. I used to juggle the spades, flip the cake knives and frost scrapers in the air and catch them.

@alexmrbvlogs That is frost on a large stone slab that is sitting on a refrigerated surface to keep the ice cream cold while it is prepared. When the frost is too thick it is scraped into the trench of running water above or below it. We scrape the coating of frost off each time so there is no cross contamination from food previously prepared and so there is always a clean surface to work on.

Having years of experience in the service industry I will say this though. Generally the more natural and expensive the safer, but the safest and cheapest is to cook for yourself. You can even make home made icecream :) Thank you for the sensible comment chethawetha

True yea, it makes it faster but even if you use a minimal amount of water it leaves a bit of water in the ice cream and when the cakes are refrozen it crystallizes. It makes the texture less pleasant. When people eat it right after you make it rather than it going to the freezer it is okay though because it never crystallizes. Even when doing those quick customer ones though I'd knock the spades to take most of the water off. Good lookin out though, woulda been nice to have you on the crew.

Great video! Once the inside layers are done, how is the outside of the cake completed? For the strawberry cake, what is the process to put the frosting on? For the midnight delight cake, how is the ganache covering applied?

You guys still have to use a knife and the top part of the cake pan to get your circle? Maybe your manager or the franchise owner can order the circular cutters online! (Decopac maybe? idk, we"ve always had them at our store) So much faster & easier!!

Yea I get what you guys mean. But this applies to all commercials you see. I have worked in several restaurants in different levels of the industry. Don't watch tv or pay attention to advertisements. It is just a facade and all lies. In fact they often don't use real food in the adds. Corprations are the worst thing to happen to restaurants, food, and public health. Read books and feed yourself and you be better off. Watch the movie waiting, its true but and even worse for fast food chains.

@jackjack1238 I only needed to restock one but I could make them pretty quick too when needed. I just took my time because there was no business that day and everything was stocked up and cleaned so we could really take it easy.

More specifically (and this is important), *flip the cake over* and run the bottom of the pan under hot water. Hold the cake (wearing gloves or using parchment paper); do not hold the pan, or you might lose your cake in the sink, which would be a bummer. Minor details, I know, but important.

Good point, you are the first to point out I touch the tripod and then the cake. You'r right I should have changed gloves. Fortunately I am a bit OCD so I keep my camera and equipment in cases and constantly cleaned enough to meet even food safety standards. I've never had an incident from my work because I am anal about it and do it right and clean. I will tell you this however, these places mostly hire cute little teenage girls in high school.. think about it, its scary.

I depends on the size of the cake and the desired ice cream to cake ratio. The Cold Stone cakes are 50/50. Half of the pan is filled with the cake and the other half is filled with ice cream, It is done four layers or 25% at a time for more stability. All you need to do is use a tall pot or pan and fill half with ice cream and the other half with cake. If you go to a cold stone then they could tell you more accurately how much they use but it will not be relevant for you if the pan you use is not the same size. Good luck :)

If you're interested, you can actually see some interesting details in the first frame of the video (just restart it and pause it at the beginning), The notebook is CSC's employee guide to how the cake is made. First, the sizes (bottom-left corner) are "Petite" (round 4") "Small Round (6"), "Large Round" (8"), "Small Rectangle" (8"X10") and then the "Large Rectangle" (10"X14" as I recall). Next, ice cream portions. The Petite has 6 oz IC, Small Round has 1.25 lbs IC, Large Round has 2.75 lbs IC, the Small Rect (as I recall) has 7 lbs IC and the Large Rect has 9 lbs IC. If you're really curious, you can look at it for how much graham cracker pie crust to mix in, but I'd just say buy your pie crusts, break em up one at a time and add them in, to taste. Don't be afraid to use more than CSC uses, cuz if it's your cake, then it should be suited to your tastes. I hope all this helps. The frosting for this cake is A Truly Special Thing. I'll post about it separately.

After this it is put is a super cold freezer until a trained decorator puts icing and decorations on it. Thanks for watching. :)

I think its called buttercream icing. You could probably go to a cold stone and just ask the workers what the ingredients are. If you go in at the right time someone will be building them and you could watch how its done. The decorating is usually done in the back though.

Yes. One of the cool things of working with the cold stones is that they constantly form layers of frost that you work on and then scrape away each time you take something off the stone so it is decontaminated. It is also washed each night with hot water and I think maybe some sanitizer.

Its is all we had to work with. I had no choice in the equipment or techniques. We would intentionally leave the layer of frost. It makes the cleaning much faster so you can start mixing something else in the same spot.

Before placing the ice cream on the stones workers are instructed to remove the ice with a scraper so there is nothing but the cold stone left to keep the ice cream at temperature while mixing and fluffing. If done well there should be no ice getting to the ice cream.
