This is a video of an outdoor wok station, it's powered by a jet burner that will produce a 1 foot flame that will give your Chinese cooking that real restaurant flavor.

This is badass. I used to own a Chinese restaurant over a decade ago and I hate cooking at home. Nothing is the same once you've cooked w/ jet burners. I've been meaning to build a stove but never got around to it. Thanks for sharing this. 👍👍

A tip I can give having grown up inside chinese Restuarant’s is that you can move the ball valve so that it’s facing 6 o’clock and level it to the height of your knee cap. This allows you to have both hands while cooking and using the your knee to control the flame.

You ever thought of making the burner adjustable. You could permantely mount a larger pipe with a set screw and the burner could ride up or down, I think it would be benefitial to you. Nice project, I may make one for myself. Also, one other the thing, where your current burner is you should maybe set the angle iron lip out to be able to get to the mounting hardware easier.

@@vladimirmach6145 Yes - to develop 'wok-hei' the most important things are: 1) Practice cooking often, and 2) Don't overload the wok You don't need anything else besides a wok and a decently strong burner, and practice!
@vladimirmach6145
@vladimirmach6145 Жыл бұрын
@@danaolsen9603 Well, from my practice I've learned that wok-hei is achieved by two essential prerequisites: 1. Extremely hot wok. 2. Contact of the food with the flame, especially at the distant edge of the wok during tossing. As soon as the ingredients slide from the edge and are catapulted up and backwards, they must touch the flame leaking up the wok edge to ignite and wash in the fire. This enables achieving wok-hei even if a slight larger portion is being prepared. Here's how I'm doing it: kzbin.info/www/bejne/gWqacmhqZsh2iJI

Nice job on the build here. I have a suggestion that may help you if you would like to improve the performance of the device. The burner you have designed is basically a pipe burner, and a pipe burner needs a Venturi to properly control the gas/air mixture. You can purchase a Venturi for less than $30 at Tejas Smokers.com. In your application the Venturi would be used with a #61 orifice fitting which you can also purchase there. You could then open up your present exhaust holes and you would have full control over your flame right at the Venturi and eliminate the makeshift " shutter" you are presently using.. Anyway, just a suggestion. Keep up the good work !
@CM-xr9oq
@CM-xr9oq 6 жыл бұрын
By design, his burn is a venturi. High pressure gas will suck in air from the bottom of the pipe. However, performance would likely be increased, if the orifice was inside the bottom of the burner pipe.
@deltafour1212

@@CM-xr9oq So using a high pressure regulator you don't need a shutter because air is being sucked at the bottom of the pipe? ?

Great video. I bought a basic turkey fryer type burner supposedly outfitted for wok use. Has a normal burner and venturi but I am scared of it as it always seems to backfire when I shut off the propane and it does not get hot enough, plus no wind shield so I would like to build on your design. I'm curious if you have experienced any issues with backfiring, if you looked into mounting one of the jet burners available, and what you think about the other comments re using a venturi? Thanks
