I've build a few "parts bins bikes" largely out of necessity as it can be significantly cheaper. I really love the thought behind each part, using parts like Apex as just cause it is considered 4th tier, doesn't mean you are sacrificing a heck of a lot, and can be the right choice in the right build. Love this bike!

How comfortable it is - is yet to be confirmed as my wife can’t ride the bike at the moment (see the end of the video) 😊 I’m expecting it to be as comfortable as the Crocket with the Redshift stem and seatpost on the road, though both of them have more travel, so will definitely provide additional comfort offroad.

Did you have any issues with the Sram shifters to Hope calipers? Hope being designed for mineral oil and sram being designed for DOT. I've wanted to do something similar but didn't find any literature on it, Which fluid did you use and how did it work out?

These are different thinks, large tyres only make your ride comfortable if you deflate them enough, but this might impact the efficiency and other characteristics. For the road bike deflating the tyres is usually enough, but it might not be enough when you take the bike offroad.
