The kozunak is the traditional Easter bread of Bulgaria.
Kozunk is like a:

- Kulich in Rusia,
- Fonott kalács in Hungary,
- Menih in Slovenia,
- Tsoureki in Greece,
- Mazanek in Czechia,
- Paasstol in Netherlands,
- Pane di Pasqua in Italy,
- Folar de Pascoa in Portuguese,
- Hornazo in Spain,
- Osterzopf in Germany,
- Hot cross buns in England....
BUT kozunak is BETTER, than them all (nothing personal, but I am a Bulgarian woman :)
So, this video recipe is for kozunak - the traditional Bulgarian Easter bread. I'll show you how to knead the way our grandmothers and mothers made it - quite time-consuming, but the result is worth the effort 100% - very tasty and fluffy sweet bread.
PRODUCTS:
6 eggs for the dough + 1 egg for spreading
1.2 kg of flour
24 tablespoons sugar (about 350 grams)
300 ml of fresh milk
200 ml oil (or 100 ml oil and 100 ml melted lard)
2 packets of dry yeast or 1 cube of fresh 42 grams
100 grams of raisins
lemon zest from 1 lemon (grated)
1 vanilla sugar
1 tablespoon rum for the dough
50 ml of rum for soaking raisins
