I make spelt sourdough as my staple bread. I use half organic sprouted whole spelt and half organic white spelt and it comes out great! I enjoyed the texture of working with einkorn but didn’t love the result, but now you inspired me to try it with spelt. Thank you!

This looks like it was a fun experiment. I'm an einkorn fan myself, and I use the recipe from Tradition Bread for my whole grain einkorn loaves. If you ever do try einkorn again, I highly recommend it. It gets a pretty good height for whole grain when I bake it on a pizza stone, and toss ice cubes onto a hot baking tray for the initial steam. I've also done partial all purpose einkorn for some loaves as well, and they come out really lovely and are great for guests. Happy baking!

I always use freshly milled or AP einkorn for my sourdough loaves. I usually use whatever non einkorn recipe looks good to me and I will roughly follow it, adjusting the amount of einkorn flour and liquid as I knead until the dough comes out how I'd like. On days where I dont feel up to putting so much effort in I use little spoon farms sourough einkorn bread recipe and stick it in a loaf pan and we really like that for sandwhiches etc. :) I would love to try spelt and kamut eventually!! Love your videos ❤

thanks a Lot. I love Einkorn, Dinkel, Emmer an something that we call Rotkorn. I bought a Mill for my kitchen an I now love baking our own sourdough breads every week.

I like 400 grams of fresh ground spelt then 100 grams of unbleached organic white flour. It makes a really light fluffy loaf and not so dense, like when you do it 100% fresh ground :)

Dr Natasha suggest to use all purpose flour, aka white flour, as the gut damaging substances are mostly in the bran. Her son makes ferments it milk kefir for a couple of days before baking. I used all purpose einkorn that way, and it is lovely when it has eggs added.

Have you heard of Sue Becker? I’ve been listening to her on the benefits of fresh milled grains and it’s challenging a lot of preconceptions I had about nutrition. She also has a different perspective on phytic acid. She’s a Christian and comes from a lot of her information from a biblical perspective. Grains and Grit is an informative channel on YT too. BTW I appreciate your videos and your calm demeanor!

Omg I just purchased a loaf today from a local bakery :) It'll be my first time trying wheat again in a very long time. If it goes well I'll definitely come back to this video to learn how to make my own.
