Blanch 'em. 80% freeze 'em. Put 'em in cold oil. Turn on heat to medium. Done when the colour is right ('bout 20 mins). As the oil heats up it does the two fries by itself, no temperature testing required, no pulling out and putting in the fries, no spatter (as the water boils off as the oil gently heats up). Crispy cold-oil fried fries. :)

Don't salt the spuds before frying, salt catalyzes the breakdown of the oil so you don't get as many uses from it. The first frying can be low temp like 250f-275 (also extends the oil life), just to cook them to tender, gelatinizes the starch and drives out a tiny bit of surface moisture. (For passers by: the key is to get them cold all the way through before the second frying; room temp is ok, but refrigerated is best [can even freeze them].)
