The loose fat on commercial pork is from the DDGS (dried distillers grains) in the feed. The hogs are feed the by-product from corn ethanol because it is high on protein and cheeper than soymeal. The DDGS make the fat loose and also slightly alter the colour.

I agree with you on the DDGS, you also have to think about the left over hexane in the soymeal used in a vast majority of hog diets. Also consider that in DDGS being all the starch is removed in making ethanol you have concentrated any mycotoxins or chemical residue from the original corn 3 times. Like the old saying goes you are what you eat, so ya have to feed a hog well if ya want quality pork and bacon that doesn't smell like a hog.

I was using pickling salt in my brine for corned beef. I had to rinse forever to get the salt taste out of it. Switched to Kosher salt on the advice of a friend and the corned beef or corned pork comes out much better tasting.

As someone who works the costco meat department, the sell by date we put on vacuum sealed raw meat doesn't really mean crap unless the actual packaging has one. That stuff lasts for ~6 weeks before it starts to turn. What we do with the sealed goods without preset sell by dates we cut up and put in the wrapped trays for a up to a few more days before it gets sent to the pig farms or put into the Kirkland ground beef.

Instead of changing the element on my Bradley smoker I wrapped it in a layer of hot water tank insulation. The temp came up higher and faster and stayed right where you set it.

Hey got a fun project for you and the family that will keep culinary herbs fresh and easy: Build an indoor garden using a shelf rack, totes, and grow lights. The trick is to use the tote lid as a water catch and some gravel over the holes you drill in the bottom of the tote for drainage. If the plants need more room, just adjust the shelf height. Strap the grow lights to the bottom of the next shelf up. Because I'm lazy I have the lights on a timer and same with the water pump. I fill the pump's container every sunday morning and trim the plants when needed.

I like to smoke the bon fillet. Not as much fat in it, but it stays as red as store bought even after all the drying. I also dip it in boiling water with herbs for a few seconds before getting in on the smoker or dryer. Does wonders

Dunking the Ziploc bags in a pot/sink of water as you seal it up will pushout the air, surrounding the meat entirely, aiding absorption. Question... Will that eliminate the near to flip it over now and then as Ave suggested?

At first thought, I'd imagine so, but just as I was going to type this, I concluded that the flipping is probably to still let the marinade adequately reach both sides unless you were to have it sitting on a marinade tray inside the bag. Even then, it's possible the marinade could separate over the week, if left undisturbed, so I'd wager you'd _still_ want to jostle it around, no matter what... THAT being said! What about using a pressure cooker, filled with a number of bellies (as many as can fit), but operating it in reverse by booking up a vacuum pump to force all the liquid into the meat? 🤔 Actually, that might not work, at least as easily as I'm thinking... Drawing a vacuum on everything could cause the liquid to render down in a sense (because science; water in enough of a vacuum, even at room temp, will start to boil/evaporate). Someone with more culinary skills probably knows how to go about "vacuum marination" and can chime in if they read this 😏🥴

I used to buy the bacon bones from a local butcher, who smoked his own bacon, ordering whole pigs by the dozen every week, and making his own bacon, hocks, pickled trotters, pickled and smoked feet, and lots of hams. Also home made Sauerkraut, and pickled onion and tomato, plus salami as well. Genuine Bavarian butcher, but he moved premises, going to where the money was, so I lost out on that. Used to go there pretty much every day for a meat sandwich, and collect a spine or two of bacon bones as well, which you could eat nicely off of. Tasty, but so delicious, and so bad for your waist line, and so non Kosher or Halaal as well.

I brine my own corned beef using a similar brining technique. Get a marbles cut of meat, brine it with 16 water to 1 kosher salt, add your pickling spice and sugar. 1/4 tsp nitrite per lb of meat. I’ve soaked them for as long as a month, but two weeks seems to be the sweet spot. Rinse well and soak for 30 minutes, then boil or pressure cook for two or three hours until fork tender. Finish under the broiler or in an air fryer. I’m going to try the molasses in my next brine. Cheers!

Nothing better than homemade bacon, being British I mostly dry cure and cold smoke, you should try it...could do it with zip locks in the fridge (vacuum packed is best) and using your smoking cabinet with a cold smoke generator with wood dust in the bottom 😉

The line about people not being accostumed to the taste of animal in Bacon is too true... Tried smoking some with a piece directly sourced from the local abbatoir, tasted completely different. What most people is the taste of bacon is just liquid smoke.

Dietary cholesterol has little if anything to do with blood serum cholesterol. One of the many things our government medical complex has gotten wrong over the past 50 years.

Don’t add sugar to the marinade. It makes it hard to crisp the bacon w/o burning the edges. Instead add the sugary things towards the end of cooking and form a sweet sticky glaze around the crisp bacon.

Build a hot enough smoker and the blanket wont be needed. Mine is based on a pellet smoker. Fired up an hour ago to grill some thin chops at 400 while the outside temp was 32. Hit 410 in less than 5. But thanks for the mouth watering cooking show!

Go binary and go to 1028 on 2 hands . If it used for anything other than a surface plate do not use granite high up keep and not a sealed surface all kind of things grow in the nooks and crevices.

Granite is murder on knives, just like every other stone surface. I personally like Solid surface/Corian in solid colors as it's impervious to stains, easily repaired, and cheaper than the various stone options.

You’ll soon be calling them ‘lack-of-sleepovers’. Children rarely return from them in a well adjusted and fully functioning condition. My current child (11) attempted an all nighter, I picked up a child whole had less than 3 hours sleep. That was a rough day for Dad.
