Janab i do not have a coal grill so i took the risk of cooking them on my simple skillet and it came out so well ,with an entirely different taste ,my next effort will be the way you have adviced ,ie on the coal grill shukriya with all regards to the elderly .

belle fareeda AOA & Eid Mubarak aap ko aur aap ke tamam ghar waaloon ko. Arsah 2 mahinay ki taakhir ki maafi chahita hoo. Lawazmaate zindagi ki masroofiat badh gai hain, jis ki wajah se Channel ko 2 mahinay se koi waqt nahin de saka. 6 mahinay ki taakhir se Bundoo khan bilaakhir upload kar hi diya. Umeed hay keh aap ko pasand aayay ga.

Great recipe, many many thanx for uploading this video and, You explained every thing very well and used correct name of ingredients like Kabab Chini which is called All Spices in English and most of Asian chef don't know about it and wherever they use in their recipe they said as Urdu translation of All Spices (sare masalhe) or garam masalha

For paratha couple of my cook friends from Karachi use similar techniques. Only difference is that they roll one end all way. I have purchase all of the ingredients for Kabab except for Kebab Cheeni (and Papaya) and will make them soon.

The other differed is that they don't fry paratha only cook on tawa.

If Kabab chini is not available the use Star Anise ground 1 Tbsp instead. Hum bhi tawe waale parat wale parathe banate hain Bohat mazedar bante hain. Lekin Budoo Khan style is fried in Ghee/Oil. Agar Papaya nahi milta then Use Shan Meat Tenderizer, its made of Raw Papaya.

Excellent!! I'll try it and let you know how it turns out. I'll talk to my halal meat grocer and see if he can grind me the meat with 20% fat. One thing, I don't remember bundu khan or meerath kabab in Karachi using dhaga to hold their kababs. I wonder how they keep the meat on the skewer. I've tried your Karachi style karahi which comes out perfect every time. Thank you for that. Eid Mubarak to you and your family.

It will not break not fall. if you mix very well and leave them in refrigerator for at least 6 hours. When putting on Seekh use wet hands.

There is no substitute. Pipli is very common in India and Pakistan, Online on Amazon.com

Kabab chini is (Cubeb-Tailed Pepper) PIPLI is Long Pepper. Amazon has both of them

Nilu Fur You can use it but taste will be a little different. Just make sure Powder meat tenderizer does not have Salt Included.

Saima Husnain Main ne tikka botian to banyee hain. lekin kabhi minced kabab try nahi kiyain hain. Also for Traditinal oven you do not need square Salakhain. 1/4 inch wide flat tikka boty skewers are also fine for minced kabab. See my recipe Chicken Seekh kabab, Kabab King Style

INGREDIENTS: SEEKH KABAB: Beef Qeema: 1 Kg 80% to 85% lean. (85% preferred) Yellow onion: 100 gm Green Chili: 100 gm Kachcha Papita: 125 gm Hara Dhaniya: 1/2 bunch Salt: 1Tbsp or to taste Red Chili Powder: 1 Tbsp or to taste Haldi Powder: 1/2 Tbsp Basic Garam Masalah: 1 Tbsp Jyfal Powder: 1/4 Tbsp Javetri Powder: 1/4 Tbsp Pipli Powder: 2 Tea spoon Kabab Chini Powder: 2 Tea Spoon Garlic Paste: 2 tbso Ginger paste: 2 tbsp PARATHA INGREDIENTS: Maida (All Purpose Flour): 1/2 Kg Sooji: 3/4 Cup Ghee/Oil: 3/4 Cup Salt: 1/2 Tbsp Water: 2 Measuring Cup Ghee/Oil to fry: As needed
