Janab i do not have a coal grill so i took the risk of cooking them on my simple skillet and it came out so well ,with an entirely different taste ,my next effort will be the way you have adviced ,ie on the coal grill shukriya with all regards to the elderly .

For paratha couple of my cook friends from Karachi use similar techniques. Only difference is that they roll one end all way. I have purchase all of the ingredients for Kabab except for Kebab Cheeni (and Papaya) and will make them soon.

The other differed is that they don't fry paratha only cook on tawa.

If Kabab chini is not available the use Star Anise ground 1 Tbsp instead. Hum bhi tawe waale parat wale parathe banate hain Bohat mazedar bante hain. Lekin Budoo Khan style is fried in Ghee/Oil. Agar Papaya nahi milta then Use Shan Meat Tenderizer, its made of Raw Papaya.

Excellent!! I'll try it and let you know how it turns out. I'll talk to my halal meat grocer and see if he can grind me the meat with 20% fat. One thing, I don't remember bundu khan or meerath kabab in Karachi using dhaga to hold their kababs. I wonder how they keep the meat on the skewer. It will not break not fall. if you mix very well and leave them in refrigerator for at least 6 hours. When putting on Seekh use wet hands.

Saima Husnain Main ne tikka botian to banyee hain. lekin kabhi minced kabab try nahi kiyain hain. Also for Traditinal oven you do not need square Salakhain. 1/4 inch wide flat tikka boty skewers are also fine for minced kabab. See my recipe Chicken Seekh kabab, Kabab King Style

I am trying the recipe for first time and but missing two ingredients Kabab Chiney and Peeply. I have no idea what these are so the question is what is their English/US name or another name? And Is there a recommended substitution Or should I just skip these two ingredients. Thank you in Advance.

Sonny Ali Cubeb pepper and long pepper. There is no substitute. These spices are for KHOOSHBOO only.

+syeda n Yeh roti nahi hay. Yeh fried paratha hay. Iss main Sookha bilkul istemaal nahi hota. Lekin aap ki marzi aap jis tarah ghaahain karain. Even ke oil kaala padh jaayay.
