Ooh, I had no idea I could use my celeriac to mak noodles.I m diabetic so I use lots of celeriac as my substitute for potatoes. I have just ordered a spiralizer. Thank you Bunny. Happy gardening 🙂

@@bunnyguinness Bunny, I had to report back because with dinner tonight, I cooked carrots and potatoes just as you described - unpeeled and sautéed, then steamed, in a pan with olive oil, salt & pepper, and a little water. First time. And they came out delicious! Much stronger flavor and lovely, delicate texture! You converted me! Thank you so much!

Great suggestions including the cooking suggestions. I also try to keep as many cold vegetables as I can in zone 7b. Mostly I am using a thin layer of leaves and a bit of mulch. The fleece is ideal but it requires a lot of work. I do not have a fleece with the wires so it is a hassle to set it up

Lots of good advice. I like to use a lot of fresh herbs as well, treating them more like vegetables than 'just flavoring'. I stopped peeling carrots and potatoes years ago (unless specifically required for a recipe). Oven roasted Yukon Gold potatoes are wonderful with rosemary and dill. Swiss chard is definitely winter hardy here in Southern California; even when they've bolted, I let them go. Such an architectural plant. The "Bright Lites" variety is so pretty, with red, hot pink, orange, or yellow ribs. Due to our hot summers, various plants die back, but regenerate during our mild autumns. I now have more of my favorite Cherokee Purple tomatoes than I did in August, though I foresee a battle with the squirrels. A key takeaway here is to do what you can, based on your own climate and time constraints, to supplement your diet with fresh produce. It doesn't have to look perfect. :)

Like the idea of growing leeks in a netted 'crate' . I have been troubled by allium leaf miner in recent years, but wasn't convinced draping netting over a row was enough to deter them effectively. Wooden sides might. Parsnip gladiator was fantastic last year, but my first sowing this year completely failed - I guess due to slugs. Not sure if my second half-hearted sowing in June will yield large enough roots; but the current incredibly mild weather may just be enough (?)
