Good thing you’re getting fresh eggs. Fun fact: since they’re fresh from the chicken, you don’t have to fridge them. But you do have to wash them before you use them.

To add to MelBell’s comment, if you put on some gloves and wash, dry, and coat your fresh eggs in mineral oil, place them in a clean dry carton small side down, you can store them for up to a year in the fridge, or around 3-6 months on the counter, depending on the temp and humidity.

If you learn how, poached is a good way unless you hate runny yolks. I would consider unfertilized eggs vegan. The bird has to lay, you are not exploiting her and she isn't being harmed. Indeed, she is being cared for. Another good way is deviled eggs, you can make your own mayonaisse. It's fun and not difficult.

Almost immediately after watching this, I made myself a plate of scrambled eggs and followed your results, and hot damn these are delicious UPDATE: I've made eggs using this method for almost everyone I know now. They all agree they are simply the best, and better than any other method for scrambled eggs. Everyone asks me how I make them, and I always tell them Mythical Kitchen taught me. This is especially true with pans that have been used, but pans often have micro cracks at the surface. When you pre-heat the pan, the heat will expand the metal of the pan and force those micro cracks closed. If you throw eggs into a cold pan and then heat it up, the eggs get stuck in the micro cracks and won't come out with regular washing.

Josh cooked his eggs quite a bit faster than Nicole in the first step -- and the last step. That's what makes the difference, IME. Cooking 'em slow gives a creamier texture. I think when you add salt is irrelevant. The cold pan was way hotter than the hot pan in the last step. I think Nicole really just is better at cooking scrambled eggs.

She is better at cooking everything. I went to culinary school and it is CLEAR that he hasn't had any classical training and she has. I watch all of the videos, and his lack of basic techniques that we are taught early on in culinary school is obvious. I still love this channel! I just wish Josh would focus more in understanding WHY we are taught to do things a certain way in culinary school and HOW that affects the final results of the meal. Most of these things are obvious to people with any sort of classical training.

@@TheLadyGeekOG It's not what I think, the method was not done properly at all. Heat up the butter in the pan, add the eggs, and go for one minute on heat and one minute off heat, all the while mixing the eggs with a spatula to take the thin layers of cooked egg off the bottom on the pan. Back and forth until the eggs are done. You end up with a consistant fluffy mixture rather than chunks. Gordon Ramsey did a video on it that apparently Josh did not watch. Not sure how well it works with heavy cream, though.

Butter melted in the pan, eggs scrambled in the pan with half & half, with Tony's added toward the end. Butter for the flavor. Half and half is pretty close to heavy cream in terms of the creaminess & is fine if that's what you have on hand. And Tony's is basically a seasoned salt, & just makes everything taste better.

Those "Cold Pan" eggs are cooked at way to high a heat, youre supposed to put them on a low flame and stir them constantly when it gets up to temp which makes the curds substantially smaller. It's also over-cooked to the cold pan method. They shouldn't have a 'chew', it should be a creamy consitancy that you almost need a spoon to eat them.

Don’t even bother with heavy cream, just cook them a little bit less than normal and they’ll stay brilliantly creamy! I always use low heat and turn off the burner for the second half of cooking them and just let the residual heat do its job! Butter and some pepper are essential IMO, but milk and heavy cream are very much optional!

I love eggs. I do a more japanese styled eggs, seasoned with soy sauce and mirin instead of salt. High heat and scramble quickly and get it off the pan while it is still slightly wet to let the residual heat cook it a little more.

The milk makes it fluffy because you have to whip air in to mix it. Milk itself can fluff, a tiny bit, but i think its adding extra cellular moisture in the airated admixture, allowing it to cook evenly, without drying

Escoffier is the cold pan method proponent, Ramsey just follows his method. We were taught to never use butter or cream in scrambled eggs because the protein in the dairy binds with the protein in the eggs and if not eaten right off the stove, as in a buffet situation, the eggs get tough and a water pool will form under them. For omelets, we would add about 1 tablespoon ice water right before pouring in the pan. It makes the omelet much lighter but does not cause the problems dairy does.

To make truly fluffy scrambled eggs, place eggs and salt in a blender, then whip at maximum speed for 30 seconds, then pour into a warm, medium-low pan that has 1 tbsp of melted butter per 2 eggs in it. Scrape the bottom of the pan with a spatula every 30 seconds until the eggs are as done as desired. Plate and serve.

I use what Alton Brown suggested, a teaspoon of creamy mayo per 2 eggs mixed with the egg.

I know it would be less fun and much more complicated but i feel like this should be a single-blind study. Them knowing which one is which definitely has some kind of impact on the results. Love this series regardless, one of my favs!

You should add any seasonings you want for your eggs in the eggs before you cook them! It makes the final product taste better and with the mixing, just whipe them till they feel stiff and fluffy. Cheese is a good choice to add but otherwise, normal!

@@popicalbubbles Except 4 trained professionals determined the taste is BETTER if you season later. Also you shouldn't season with anything except salt until they are finished cooking otherwise it inhibits cooking and the eggs become tougher.

The point of cold pan is low and slow, they should have been done way after so you actually proved it right by picking the "hot pan" because it was the one with the lowest peak temp. It's why it finished cooking second.

Gordon doesnt do it in a cold pan either, he heats it up but takes it off the heat to keep the temperature down to keep them from overcooking

Part of the key to making them SUPER fluffy is to allow them to sit in the pan for a little bit before you fold them in.

This whole episode is void because they didn't add cheese. I would have even accepted American cheese, normally I use cheddar. This may be slightly biased being from Wisconsin so take it with a curd of cheese. Love the show and the crew keep doing these please.

I always add water to scrambled eggs if I'm out of milk. It makes extra steam for the omelets to fluff.
