I have to agree. Sous Vide is best! The salt brine doesn’t work with sous vide as you are cooking under vacuum. But best for grilling. And YES always baste your steak! For resting there is no need with sous vide. But other methods is a good practice.

One of the main benefits of sous vide *and* reverse sear is that they greatly reduce the need to rest the steak, because you don't need/want the temperature gradients to equalize, and meat cooked slowly is less likely to "juice out" when it's cut. I'm surprised that resting still resulted in a better result, but you were never going to see the main benefit of resting the meat because of the way you cooked it.

You have no bleed out on an unrested sous vide steak, due to the nature of sous vide cooking. It's essentially been resting its whole cook.

This. Steak needs to be rested after grilling or pan cooking. After sous vide, it doesn't matter.

@@wakeupitskelsey perhaps I'm just picking nits here, but they liked the rested steak more because it was more chewy. Chewiness increases as the steak cools down. So yeah, if you're used to eating rested cold chewy steak, then of course you'll like rested cold chewy steak more. It's a personal preference. But if they'd evaluated "juiciness" scientifically by measuring percent weight loss rested vs not rested, sous vide vs pan cooked, they'd have found SV resting makes no difference, while pan cook resting does. There have been numerous articles on this, for instance on serious eats.

Myth Munchers is my favorite series on Mythical Kitchen. I like seeing the whole team interact, and all their personalities are great. I find Josh on his own too strong for my tastes--like a mouthful of Tony C's--, but when all the Kitcheneers are together, the blend is perfect.

Resting is something you do with large cuts of meat. You take it out slightly under temp and it will climb 5 degrees as the temp on the outside and inside of the meat equalizes

Beautiful episode; I love how Myth Munchers shows off the whole Mythical Kitchen crew, it's always so fun, and I actually learn things that will help me be a better cook at home. Case in point, I was already planning on showing off sous vide steaks to my visiting niece, so this is perfect timing... And I'm very glad sous vide won and justified my purchase!

Also I think it's a known thing that resting isn't really necessary with sous vide; Because it's cooked at the temperature you're cooking to, you don't have to worry so much about the liquids separating from the meat... Or something. I don't get the "science" of resting either.

Coincidentally enough I cooked a ribeye steak on Sunday, and when i basted it in butter it worked out pretty well.

I order steak for my grandpa at restaurants and I get him medium well because I know for a fact he will order well done and then complain that it’s to tough

One of the best parts of the sous vide method, in addition to the buttery soft steak it makes, is that you can pop out a steak and quickly sear it and have it ready right when it needs to be ready. If you are making multiple steaks such as for a family or hosting a dinner party that versatility in timing is invaluable. I don't think it is the "best" method. The best method is going to be the one that produces the best results for you and there are many considerations when cooking such as the cut of meat, who you are cooking for, and the tools and supplies that you have on hand.

A buddy of mine is a food scientist. And they got tasked to see if you loose any juices in a steak if you let it rest vs no rest. Now while like they found out it allows the fibers to relax but juice wise it doesnt matter. They had to do it for a scientific cook book. Thought it was interesting when he told me that.

I always slightly undercooked then rested my steaks covered (either in foil or a cloche), the whole point is for the internal temperature to even out so you get a more even cook from a grill or pan sear. Sous-vide is this but on steroids so no need to rest. Great episode otherwise!

I would make one argument on the no need to rest sous vide thing. You do rest the steak after sous vide but during a different part. You rest the steak right after it comes out of the sous vide and cool it down a bit so that when you put it back into the pan it doesn't overcook the steak and create gray lines while you're trying to sear it. I made that mistake the first couple times I sous vided my steaks and ever since I switched to doing the paper towel into the freezer while the pan heats up method I have gotten much better results. The difference is it's not to continue the cook on the steak it's to prevent the steak from being overcooked from the searing process but it's still a rest nonetheless just in a different manner.

Our sous vide came in clutch during the Great Ice Storm of 2021 and our fish aquarium temperature kept dropping because of power loss. We used the sous vide to warm up the water whenever we'd get power and the fish lived!
