​In the kitchen, talented chef Jan Hartwig waves the culinary sceptre. The chef was born in 1982 and has already achieved to reach the top of the culinary world. In 2014, Jan started working at Hotel Bayerischer Hof in Munich. The same year, Atelier got his first Michelin star and Jan was crowned as “Newcomer of the Year” 2014 by the FAZ. In November 2015, the second Michelin star followed tougher with 18 Gault&Millau points. In 2017, the team achieved to get the third star.

See? Everyone isnt slow, but they are just quiet, sometimes say something and they are calm. This is how you should run a busy kitchen: calm, professional and no unnecessary yelling. People in fancy restaurants are capable of understanding that their food just needs time, so they dont rush and just calmy sit and wait for the course. This is how ALL the restaurants should operate.

No. The best chefs in the world would agree. Its hard its dirty and can be ruthless, but its all apart of the process. I mean there's nothing wrong with discipline.

These comments are sad. People who bad mouth this video clearly have no idea about what food safety actually is and how it can effect you. Look at how clean every cook is and the whole kitchen, its immaculate and its in the middle of service with a full board of bills. People talk about it not being busy...just because you can't keep yourself calm and collected in service doesn't mean these guys can't. Mise all in place, no need to run around like an idiot, nobody is sweating, everyone is calm and collected and working together as a team, like a brigade should. I would eat off these cooks fingers before the "clean" plates kept in your homes. Just don't comment about things you know nothing about it, its customers like you that ruin some aspects of the industry.

Thanks you! The only kitchen I ever worked in with proper rapport and morale was a fine dining kitchen. The people gave a shit about service, customers and the food and not benching against their coworkers. Took a long time for those cooks and chefs to leave the holly hobby "kitchens" and work in an actual kitchen.

Very nice and clean kitchen. And very professional staff. Because the pressure on the chefs and the support staff , because they have to deliver any dish ordered within a max time of 15 mins. Chefs sometimes cook several dishes simultaneously. And they have to remember the particular processes for different dishes. That's why chefs should be respected, as there's so much effort behind making those tasty food

People that don’t know what they’re talking about shouldn’t be talking at all, look at those sides where the dish heaters are, they are squeaky clean like new, this is kitchen work at it finest, it doesn’t get better than this, absolutely mindblowing to me, it gives me goosebumps

People be like "That isnt busy" but look at 1:30. That's NINE bills hanging up, and each dish has to represent the divine heavens for each customer. Or else they'll bitch and say their $25 meal wasnt up to standard. This is professionalism at its PEAK.

The difference is they were just slaves catering for the elites many o' feasts and banquets. No one owns the creation of a professional kitchen. Each culture and cuisine has brought exciting new elements and flavours. We stand on the shoulders of Giants who worked much harder than we could comprehend with our pacojets and rationals. I'm not going to say it's easy, but it is kind of easy in these michelin restaurants where everyone gets the same five course meal. They can do it assembly line style like at 5:00 instead of the chaos of a standard cook-to-order restaurant.

Keiner zwingt dich, in so einem Laden zu essen. Abgesehen davon, völlig unabhängig vom Preis, geht man höchstens 1-2 Mal pro Jahr auf diese Art zum Essen. Das ist ein ganzes Entertainment-Programm, ein Kurzurlaub, nicht nur einfach lecker mampfen. Sauerbraten kannst du dir einmal pro Woche bei(Schwieger)mutti holen.

That is TV, this is reality haha.. And I dont think Jan will go out of business any soon, and he pays everyone and I doubt he got debt over his ears and he is not a alcoholic for sure, and his fridge aint got things that is 6 years out of date and raw chicken next to salad, and he has not declared WAR on "Yelpers" and his wife is not running around crying during service while the owner shots vodka at the bar then breaks down when Gordon confronts him in the back of the kitchen

Michelin stars is not really a good thing. It really stands for how many times you wiped your feet before you walked into the restaurant. One star for every swipe of your foot on the door mat outside. What is really being implied is you are putting your hands in somebody else's food. You really should be wearing gloves. There are food handling gloves. In India, they say "you eat your food with your own hands." I'm a German who grew up in India.

Michelin stars are* ... And in India people wipe their butts with bare hands. In Germany you use toilet paper. Also, these people frequently wash their hands. And wearing gloves all day increases the chance of severe skin irritation, because you sweat inside them, and the sweat can't evaporate. Irritated skin on your hands is a greater health hazard than dirty hands.

European cooking grill pan fry meat chicken salt pepper on plate few drops of oil sauce few leaves vegetables 5 people work on 1 plate 🤣🤣1 puts the meat 2 vege 3 drizzling blunt sauce 4 few green leaves 5 sprinkle salt herbs 6 cleans the plate done But still hard works

Bro they're in the back focusing on their work. You don't see construction workers smiling all the time. The waiters in the front are the only ones who have to act. Do you smile while trying to learn something or do some home improvement? No, because you need to concentrate. Does that mean that you absolutely hate this task? No, because then you wouldn't do it in the first place.

It's always the same stupid comments. The portions are never a full dish, they're always a part of a multiple course menue, usually six to ten courses. You don't go there for the food alone but for the entertainment. A dinner at such a place can easily last three hours.

I have been a chef for such a long time and that´s disgusting if you care for your customers health,avoid them from a flu,a cold or covid,if you try some food use another fork,or spoon if u wanna try again.Even in a Michellin star awarded resturant you are eating saliva from the chef.....not fair and not in my restaurant
