Yeah these guys love what they do. They clean as they go. If they make a stain, they don't leave it for later. They clean it then. Makes the end of the night cleaning much easier and quicker. Also maintains the quality of your equipment by not letting anything stay for long periods of time. I have worked in over 6 different commercial kitchens and you are definitely right. The first 5 kitchens I worked in were filthy. I wouldn't want to tell people I worked in those places. Now the latest place I am working at is just as spotless as this kitchen. We are under staffed and yet the kitchen is always spot less. When you have a great executive chef and a team of employees who love their job along with having a respect for their employer, the ones who pay their bills, this is the outcome. A kitchen everyone would be proud to say the work in.

@@donimmy2k I frequent a restaurant in my neighborhood and got to know the owner and later the chef and staff. I found out that the owner had a special crew that comes in at midnight and clean everything in the restaurant from midnight to 8AM. The restaurant is spotless as a result of another group of people whose responsibility is to ensure the cleanliness of the restaurant. Most restaurants have their kitchen staff do all the cleaning, imagine working all day and having to clean the kitchen before going home, you might not do a great job at times, and if this happens all the time you will have a buildup of grease that becomes almost impossible to remove. A clean kitchen or a restroom gives you an insight into how the business operates. If they cut corners on hygiene they will most likely cut corners on the food.

For the folks who saying ’ clean wok‘, I want to explain that. There’s so many ways to avoid sticking, he’s doing one of those. In Chinese restaurants cooking, that’s how we do before start cooking. Because we use the iron wok which is the non-coating wok, we have to make the wok become a ‘coating wok’, so oil is the coating. The method is high heat , put oil in, the process is deep fried the dust and some shit sticks on the wok, then put water in, water will go underneath the oil and the dust shit, then the wok has nothing to stick. But it has to go with couple times, just in case. It’s hard to explain in English, but hope you understand.

The executive chef controls the intense flame with his knee while cooking to create a dish that preserves the freshness of the ingredients. It is difficult to create the same dish at home, the commercial kitchen is ideal for this type of cooking, that is why we go to places like the Shang Palace to enjoy the culinary experience. This is high level cooking. The seasoning steps allow the fried rice to have absolutely no oil. He literally brushed off any remaining droplets of oil from the wok right before putting the rice in.

For people who don't know about using a wok, just cook in your non stick pan or keep changing a new pan every time and chuck the dirty one to the steward. I'm a chef for 16 years and doing both Cantonese and Western. The cooking methods and culture is very different and only true professionals understand what are they doing during every steps. mei yuk It had already been seasoned, which is done by placing a new wok over heat until the inside and outside both completely change colour, then washing it etc. A wok is not made nonstick by washing it 6 times. Google wok seasoning and you might learn something except calling people names. Your name suits you.

+bronzerat012 perhaps mei yuk wasn't too elaborate on "making the wok non stick". Yes, what you said is correct, but that's just seasoning it. Everyday before you use it, you would have to "re-season" the wok by doing what Chef Mok did. 1) First wash was a normal wash. 2) 2nd time when oil was put in, poured out, followed by water was the 2nd wash, and it could end here. 3) 3rd time... perhaps he felt that the wok was not well re-seasoned, and so the third time. Perhaps for home use, a wok need not be seasoned everyday, but for a restaurant, the number of dishes cooked in a night could be more than what is cooked in a month at home. Cheers!

What a joke. No wonder the menu prices are in the stratosphere. He spent $15 in utility bills before any food was cooked. Only to heat up some rice? If I was GM I'd fire him and the idiot Director of PR who approved this waste of precious resources.

That's why you don't run a hotel. A few minutes of gas, and the video has been seen by 140,000 people, including you. The restaurant was also featured in my article in Business Traveler magazine, again seen by thousands of people. Seems like a good ROI to me. Maybe someday you'll have the opportunity to dine at Shang Palace for yourself.

This is the method of seasoning the wok and also to make sure turn the wok into none stick wok. This process repeat more than 5 times.

It seems they just run them during the shift, just like the gas burners. I think it's just how a busy kitchen needs to operate. I see it as more as the cost of doing business. I don't know enough about Chinese cooking but there sure are a lot of comments about it. I believe they are cleaning and preparing the wok.
