Pretty cool! I only grind meat once in a while, so the kitchenaid attachment is good for me. Definitely trying this, I can’t wait to make a cleaner sausage for my recipes.

I used to make all my sausage, sage, italian, summer, etc. It has been a while. You have inspired me to start again. When I make a breakfast sandwich, I use the ring to cook the egg in so it fits the english muffin or bagel I use. I have electric grinder and prefer a hand crank stuffer for better control.

I would recommend 24-26mm sheep casing for sausage links for breakfast sausage. Italian sausage and choizo I recommend 28-32 natural hog casing. I do highly recommend a dedicated sausage stuffer.

I feed my dogs and cats a raw diet. Many many years ago I got myself a meat grinder. It worked great. But I was new and a little clueless, and I threw the meat in no problem through some veggies and no problem even ground up some chicken bones :-) Decided the dogs needed some kidney and liver also through that oops. It was not frozen and it’s splattered all over the kitchen. It looked like a horror movie scene.😜 live and learn.

Technically the easiest way to make sausage, when Pork shoulder goes on sale at the grocery store, chose a pork shoulder you like. Take it to and ask them to grind it.

My KitchenAid attachments were terrible for grinding meat! No matter what I i did, I always noticed grey metal shavings in the meat and wouldn't use it.

If part of your Kitchen Aid attachment is aluminum, it is oxidation. It would help if you cleaned it before using it. This dull haze is a natural reaction to oxygen and is entirely unavoidable. I use vinegar and a scrubbing sponge for the first clean, and the second clean is baking soda. You can find other methods of cleaning aluminum if you search. If it's not aluminum, then you have metal-on-metal wear. In either case, you do not want to consume the gray. Just my opinion and I am sure there are better qualified people to answer your question.

@@ButcherWizard I thought @nickquejada was asking whether spices could be added AFTER the grind. That way you could bulk grind the meat and fat, and then customize each sausage recipe once you had the meat ground up.

Where did you find fat back? None of the local grocery stores say they have it and non of the independent butchers. I have yet to try the Mexican grocery markets and meat markets. Can I use pork belly? It has a bunch of fat in it.
