BUTTER CHICKEN
Preparation time: 10 minutes
Cooking time: 30 minutes
Serves: 2
Ingredients
For the Gravy
4 large Tomatoes, cut into half
2-3 large Onions, sliced
3-4 Garlic pods
1 inch-Ginger, sliced
1 tbsp Degi Mirch
5-6 Cloves
1 inch-Cinnamon Stick
3 Bay Leaves
5-6 Black Peppercorns
2 Green Cardamoms
2 tbsp Butter
Salt to taste
For Butter Chicken
2 tbsp Butter
1 tbsp Red Chilli powder
1 tsp Coriander powder
Prepared Gravy
3 tbsp Fresh Cream
1 tsp Honey
Cooked Tandoori Chicken, shredded
1-2 drops Kewra Water
1 tbsp Dried Fenugreek Leaves, toasted & crushed
Burnt Charcoal
1 tsp Ghee
Fresh Cream
Coriander Sprig
Process
For the Base Gravy
• In a heavy bottom pan, add ½ cup water.
• Add tomatoes, onions, garlic, ginger, degi mirch and all the whole spices. Mix well.
• Add 1½ tsp butter, salt and mix well. Cover the cook for 15 minutes.
• Once the tomatoes are soft, with a hand blender, blend the gravy till smooth.
• Strain the gravy through a strainer.
For Butter Chicken
• In a pan, add butter and allow it to melt. Add red chilli powder and coriander powder, cook for a minute.
• Pour prepared gravy, mix well and cook for 2-3 minutes.
• Add fresh cream, honey, shredded tandoori chicken, mix well and cook for another 3-4 minutes.
• Add kewra water, dried fenugreek leaves and cook for 2 minutes.
• In a small metal bowl, add burnt charcoal and place it in the middle of the gravy.
• Pour ghee over charcoal and immediately cover with a lid, keep it 2-3 minutes for the smoky flavour. Once done, remove the charcoal bowl.
• Transfer the butter chicken in a serving bowl. Garnish with fresh cream and coriander sprig. Serve hot with roti or rice.

I am a chef myself, and I must say, nowadays, Chefs are frustrated, arrogant and hyper.. Chef Brar is one of the calmest chefs I've ever met. His and Chef Kunal's recipes are the best and easily explained ones and I wish to meet him once in my life

We went and found his Tandoori Chicken recipe, made it. Then used the leftovers for this recipe. UNBELIEVABLY good!!! We added a touch more honey and butter because our tomatoes were a bit more acidic than I cared for, but this recipe was SO easy to follow and adjust for flavor. This was RESTAURANT quality food! Thank you chef!

Like your methods. I am a home cook and like to try different recipes. Mechanical engineer by profession. Now retired. Here have a question. Why put butter in the sauce when cooking? Lot of it will get lost in the sieve leftovers which we throw out. Can we just keep the butter for next process while the gravy is cooked? I use Tandoori chicken from Air Fryer.

More than chicken biryani, I personally felt that making butter chicken is more tedious process cuz you have to put all of that in a blender and filter out the seeds and stuff, Grill the chicken separately and add them altogether.

So I was once told by a punjabi chef that the makhni is murg makhni was not because of the butter, it was actually because the gravy is smooth as makhan. Traditionally, it gets its flavour from cashew paste, kasoori methi and mustard oil. But again, this must be one of the many theories as well.

Brother there are people like me 😂 who do not know how much quantity is required example how many tomatoes how much of salts other ingredients etc so please explain with the quantities 🙄

Hi Sir, First of all I wish to tell you that this is the best butter chicken recipe on KZbin. Secondly, I tried making it. Now turning out good is one thing. But, you know the recipe is on whole other level when you can make your parents proud. My father is hard to please when it comes to food but it is also one of the things we bond over really well. Your recipe has helped me please papa and you do not know how much happy the fact has made me. Just to hear his remarks and listening to the way he praised the dish translated into pure concentrated happiness for me. Thank you so sooooo sooooo much!

Hi Ranveer bhai I tried youe recipe butter chicken Or maine 3 kg chicken k sath banaya kyuki log jyada the us time par or mujhe dar bhi lag raha tha ki itni quantity me sahi banega ya nahi Frist time but jab maine apki smile bar bar dekhi vedio me to laga ki tik hai banani chahiye fir kafi mahnat k baad maine jab taiyyar kia to pata hai mere family ne kya bola AJ TAK HUMNE AISA BUTTER CHICKEN NAHI KHAYA. I am a FAN of Ranveer Brar. When I need to look at an intelligent, well dressed and well spoken, cute face, natural comedy, some great kitchen tips and yummy food, it just has to be Ranveer Brar. Bana ke enjoy karoge😀😀, that made me laugh a lot😀. Ranveer you are great cook not only you just cook but you provide lots of information about the food. In my opinion you are better than Gordon Ramsay and Jamie Oliver. No doubt they are good but I think they are over rated and you are underrated. Thanks alot for making such awesome videos.

I have been cooking butter chicken for 20 years….and never marinated the chicken twice….per your recipe…followed your instructions and the results are spectacular. Not only is it the best butter chicken I have ever cooked but arguably the best butter chicken I have ever tasted….thank you for having this KZbin channel. I have become a HUGE fan! When you grow up in India and then leave India for the US at the age of 23 and spend 30+ years in the US you realize the incredible richness and diversity of flavors in Indian cooking….and thanks to Ranveer Brar I feel like a kid in my retirement years cooking Indian food…..I hope someday I have the opportunity to meet and thank you in person….your recipes make life so much more wonderful!
