Word to the wise. If it says "partially hydrogenated" then it has trans fat. The FDA does not require labeling of trans fats that are under 0.5g per serving. So the company then reduces the serving size from say 1tbsp to 1tsp. It could have 1.3g of trans fat in a tablespoon, but when reduced to a teaspoon it's a magical 0g. "Fully hydrogenated" is basically just the same saturated fat as in the video. It has been given even more hydrogen, and thus is just as bad as butter without health benefits.

In fact, the reason trans fats are so unhealthy is because the body THINKS it's saturated fat when it's not. Also, saturated fats are healthy...as long as you're not eating too many carbohydrates (which are extremely UNhealthy).

Partially hydrogenated means only some of the molecular chains end with hydrogen atoms, which is BY DEFINITION a trans fat. I didn't say saturated fats weren't healthy. I said they were "just as bad," which is true.

Well, to be honest, I really can't believe I don't have diabetes. Got a horrid sugar addition, and I just can't seem to kick it. I'l constantly eat a small (but harmless) amount of sweets all day and it keeps me happy. The problem is when I don't eat a bit of something with sugar in it after every meal and later in the day the urge to devour sugar endlessly comes. Happens about once per week and I compensate by eating less other unhealthy items for a little while afterwords. It sucks, but I have to say sugar makes me feel absolutely blissfully euphoric for about an hour after it sets in, relieves all negative feelings I may have and makes me absolutely chill. Then sleepy as hell for an hour or two after that as my body rids the excess sugars. I need to stop. FML

Natural, high quality saturated fat (like in grass-fed butter, or coconuts) is in no way bad for you. Sure, it is a calorie dense food, so you should limit the amount you eat, especially if you want to lose weight, but it is not bad in and of itself.

Its not so much the fat itself but the amount. Saturated Fats come in HUGE amounts (french fries, chicken wings, onion rings, processed foods) and this amount is very bad. Fats are just another form on energy that your body breaks down for fuel, too much creates excess calories that your body stores for later (fat reserves, generally looks bad). This is for saturated fats. They = energy but usually way more than your body can handle. Very very easy to find and engorge yourself upon. Unsaturated fats are partially indigestible due to their double bonds thus pass right though us and dont add many calories to our intake. Cis-Unsaturated has a shape that doesn't stack very well and is thus easily passed through our system without causing much harm. Plus they are rare and come in small quantities that usually falls in the healthy amount, its pretty hard to get excessive amounts in your diet. Trans fats- have a shape that stacks with itself making it solid and tends to block stuff, and being hard to digest, hence very very bad for health.

spacecadet35 Yep. Its the carbon hydrates that cause health problems. The best place to get energy from is fat. Just look at all of the studies made of this subject. Butter and high fat milk will not make you fat. Sugar will, and carbon hydrates are basically just sugar, or at least your body makes it into sugar. Btw Ive eaten food with a lot of fat like butter and cream and drank milk that comes straight from the farm without any homogenization or pasteorisation and Im not fat (Im actually a bit below average weight) I dont exercice a whole lot and I havent been sick in a long time.

Melting point is main problem of fats. Butter is liquid in body temperature. Take very small sample of butter to your hand: it softens and melts. (Your hand surface is around 5 celsius degree lower than your body.) But, most margarine is rock solid. Also, high temperature application to organic fluid create lots of organic matters highly alergenic. (Look pasteurization caused alergies.)

I think this comparison includes the most important points. The only thing that I miss is that you can make margarine out of palm and coconut oil whiteout hydrogenation. Using palm oil has of course other issues (rainforest deforestation and long transport ways) and I'm sure coconut oil will taste significantly different. Still, they don't need to be processed and won't contain trans-fats

Except studies over the past decade have proven that saturated fats do not seem to contribute to atherosclerosis(heart disease). A majority of individuals with the disease have been observed to have normal if not lower than average amounts of saturated fats in their bodies yet still acquire the disease and there doesn't appear to be a causal link between the two. Saturated fat isn't so bad after all and that's confirmed by recent evidence.

Oils, especially fried foods cause the arteries to be torn resulting in cholesterol build up. So yeah we need fat but not from oil and that goes for any oil even coconut

that's not entirely true, oils only oxidize if they go rancid, are stored improperly or are damaged from too high of a temperature, and also, not that i think you should eat fried food every day, it's a common misconception that frying is so much worse than baking when in reality most baked versions of things end up using more fat, as when you fry something correctly, what should happen is the batter should act as a seal, blocking the oil from penetrating the product so in reality you consume very little additional oil when frying. oil is the only source of fat really, besides animal fat, nuts contain natural oils. it's all oil. the only difference is we've extracted it.

Margarine is a slew of artificial chemicals versus butter which is simply cream and salt. No competition when you consider margarine is a grey sludge before they dye it yellow - and it's only one molecule away from plastic to boot! People just need to understand that fat (in moderation) is good for body as it is one of the "macro-nutrients" including carbohydrate and protein. Over indulgence of anything (protein, carbohydrate or fat) will make you fat as more insulin is released which is basically a fat storing hormone. So live life in moderation and you'll be alright ! (By the way this video taught me more than my entire nutrition class on "fat" solutions !!!)

I believe you, but there are many factors that affect life, it's not just food, there are genes, strest, habits etc. It's a story like I have grandpa and he's been smoking for 40 years and now he's 85, he drinks everyday, one or two drinks ... It's not like poison, but it's not so good, like sugar, you can eat 200gr everyday of refined sugar and you will not be dead, but after a long time you will damage your body and you may get diabetes 2. Most of us use margarine because it's way cheaper. A stick of butter here in Colombia can cost almost 6 times more than a stick of margarine.

Agreed! The further Columbian butter gets away from Columbia the more it goes up! Especially when it crosses the border into America! I have a friend who gets a kilo from Mexico for $500, however, that same kilo crossing the border doubles in price, increasing the further north it goes! by the time it makes it to let’s say New York that same kilo would be about $70,000, But the person buying it knows how much people like butter, so he cuts that kilo with margarine essentially more than doubling his $70,000 investment! But it makes sense paying six times more for a stick of pure Colombian butter over margarine!

You forgot to mention that margarine these days also contain phytosterols, which actually help decrease cholesterol levels. I admit fat itself has a defect but we shouldn't be discriminating one another. Trans fats are also commonly found in natural butters so don't be bothered because of it.

That is indeed not true. If it were true the High Fat Low Carb diet wouldn't be working for so many people and progressive diabetes doctors wouldn't be reporting total reversals with patients on strict high fat diets. My blood sugar would still be sky high and I wouldn't be losing weight if I weren't on a high fat diet.

Butter is high in cholesterol, saturated fat which is proven to cause heart disease. Japan for example has a way higher life expectancy than Sweden or Australia, even though those countries have better health care, which is because Japan eats less red meat and dairy. Butter also contains carcinogenic substances such as Methionine which cancer cells feed on.

You should use the margarine called 'pure'. Contains no trans fat. As the video stated, newer margarine companies are more likely to be trans free. Just read the labels/details

I've been eating margarine for nearly my entire life, since I have a milk allergy that was really severe when I was younger, I'm glad that it goes away with time. I'm 15 now and I could start eating butter/milk products more often but I don't like the taste anymore since I'm accustomed to margarine.

If saturated fat is so bad then why are avocados, coconut oil, fishes, and nuts so good for us. All of which have a significant amount of saturated fat. I don't think saturated fat is to blame people have been eating animal fats since our existence. Fast food high in saturated fat is bad, mostly because of the processed nature of the oils used and the high sugar count. The super high intake of cane sugar and artificial sugars is the main reason high cholesterol and heart disease is so high in America.

Please be more aware of using the term"Natural" as an adjective especially when talking about butter. Butter is still heavily processed. We call a food "Processed" when it is altered for flavor/shelf life. One of these is adding salt or preservatives. That is why meat from the deli is "Processed Meat". Its not because the meat is unnatural its because preservatives have been added. Butter is churned cream with heavy salt. Salt is a preservative.

The reason that butter lasts longer than cream is that cream is an emulsion where the butter fat is tiny globules suspended in a watery liquid ("buttermilk"), while butter is mostly fat with tiny pockets of the buttermilk that wasn't churned out. Bacteria have a much easier time moving throughout the liquid buttermilk of cream than they do the solid fat of butter and this is major reason behind the reduced spoilage.

As someone from poor third world country, as a kid, I always thought that margarine and butter is the same thing. It wasn't until later that I found out that they're very different. Butter is very expensive here, most people can't afford real butter. Most store doesn't even sell butter here, you have to go to the big supermarket to find butter.

Margarines atomic compositions may be similar to plastic (there are many kinds, by the way) but it shouldn't matter, because it's made of oil (Also what plastic is made of, for your information). Butter isn't that great either, because it still contains oil and whatnot.

It all comes to the producer. Being here, in Poland, in - historically - the most impoverished and focused on farming area, i do nothing, eat hearty meals from local producers and gain little to no weight. All while getting fat easier. In UK, i've been for 5 weeks, worked 8h a day and ate 1/2 of what i eat in poland. I gained 5 Kg. And food was visibly different, too ideal. Meat had no fat stains, vegetables were smooth and shit. All chemically pumped.
