Buttermilk biscuits
3 cups all purpose flour
5 tsp baking powder
1 1/2 tsp kosher salt
1/2 tsp baking soda
1 stick unsalted butter grated
1 1/4 cup butter milk
Pre heat oven to 450.
In a stand mixer combine 1st four ingredients well then add in the grated very cold butter. Once the ingredients have a pebble like texture add in the buttermilk slowly while mixer is on low. Mix until combined well but dont over work the dough it should still be somewhat course. place on a floured surface and roll out to thickness you desire 3/4 inch is my favorite. cut them in to desire size and bake on parchment paper for 13 to 15 minutes.
This recipe works well with shortening and non dairy milk if needed. Just a reminder that the alternative ingredients will change the texture somewhat.
