READ THIS BEFORE MAKING THIS RECIPE: So you know, you can use real buttermilk, instead of making buttermilk like I did in this video. If you do choose to use real buttermilk, you may need to cut back on the marination time. Buttermilk has lactic acid which has a lower ph than the buttermilk I made by using milk and vinegar. This version has acetic acid which has a higher ph and requires a longer marination time to get the desired results. Either will work, but you have to plan based on which version of buttermilk you decide on.

Pretty interesting way to do steaks Rus. The way they turned out I’m definitely going to try that method. I never knew adding vinegar to milk makes buttermilk. Besides the cooked I learned how to make buttermilk. I do have buttermilk milk powder on hand but have yet to use it. Thanks for the content.

Much easier to make buttermilk at home for cooking.. That buttermilk can be hard to find locally. Expensive too..

Rus, I believe the small knife is sometimes called a "chef's petty knife." I have a damascus one with a 5" blade made by Iseya; also out of Seki City, Japan. It is a sharp and nimble. Your marinade is very similar to a wild game marinade in a book I own. I assume it would also be good with many red-meat types of wild game such as venison, bison, goose breast, and possibly squirrel, for example. Have a great day.

Ok, I didn't have a clue what its called. These knives are made in Seki Japan as well. Yeah, the marinade will tenderize any meat. Real buttermilk will do it in less time. Thanks and you have a great day as well.

Nice idea. I never thought of homemade tenderizer on a steak. Maybe it would work with even cheaper chuck eye steaks i see that look well marbled .. Chuck Eye tends to be $2-$3 per pound cheaper but good beef flavor still.

It definitely would tenderize any steak cut. You may need to increase the time, but it will tenderize the meat.

Great idea but I doubt this would replace real buttermilk , which has lactic acid through fermentation. With this hack you have acetic acid, which is not buttermilk

Both lactic and acetic acid will tenderize meats. It’s true that lactic acid has a lower ph than acetic acid and will do the job faster and the homemade buttermilk made with vinegar has a higher ph and will take longer, but either will get you there.
